This Dragon Veggie Quesadilla is very easy to make and a great way to load the kids up on healthy foods. My picky eaters loved this recipe and this is also very easy to decorate!
Of course our twisted minds turned one of their beautiful Spring recipes into this fire breathing Dragon. My boys insisted that we create a Dragon and we think this ended up turning out pretty awesome! My 11 year old designed this fun dinner all by himself.
Where there is Spring…there are allergies for so many including my 11 year old who feels like he has fire coming out of his face from every direction! I suppose this was the inspiration for his fun creation.
Dragon Veggie Quesadilla
- 3 Tbsp. – I Can’t Believe It’s Not Butter! Spread, divided
- 1 Bag of Yellow, Orange, and Red Chopped Sweet Peppers (reserving 1 of each color)
- 1/2 tsp. – Chili Powder
- 1 Cup – Shredded 2% Cheese
- 4 Spinach Tortillas
- Sour Cream
Melt 1 Tablespoon of the I Can’t Believe it’s Not Butter Spread in a large nonstick skillet over medium high heat and cook vegetables with chili powder, stirring occasionally until tender, about 10 minutes.
Remove from heat and let stand until warm. Cut out one of the tortilla halves into the shape of a dragon head. Use that pieces as a guide to cut out the rest. Save the scraps. Melt the remaining butter in the microwave. Brush one side of the dragon heads using your melted butter.
Sprinkle the top of your tortillas with the cooked veggies and cheese.
Cook until lightly browned and crisp on both sides making sure the cheese is melted. Cut out the wings and legs using kitchen scissors from your tortilla scraps. Decorated with sour cream and the reserved sweet peppers.
