I really wanted stuffed peppers last night and knew that my boys would not be happy about it. SO…we came up with this fun MINIONS Stuffed Peppers idea to get them interested in eating it. This worked on two of them at least and they loved it!
MINION Stuffed Peppers
- 4 Yellow Bell Peppers
- 1 Package of Microwaveable Brown Rice
- 1 lb. Ground Turkey
- 1 8 oz. Can Roasted Garlic Tomato Sauce
- 1/4 tsp. Ground Pepper
- Shredded Mozzarella Cheese
- 1 Zucchini
- Black Olives
Heat oven to 375°F. Cut thin slice from stem end of each bell pepper to remove top. Remove seeds and membranes; rinse peppers. Reserve tops & one peppers. If necessary, cut thin slice from bottom of peppers so they stand up straight.
Cook rice in microwave as directed on package. Meanwhile, in 12-inch skillet, cook turkey over medium-high heat 5 to 7 minutes, stirring occasionally, until turkey is thoroughly cooked; drain. Stir in 1/2 cup of the tomato sauce, the ground pepper and cooked rice. Stir in half of cheese Stuff peppers with turkey mixture. Pour remaining tomato sauce inside the peppers & place in a ungreased 11×7-inch (2-quart) glass baking dish. Stand peppers upright in dish. Also line up the pepper slices in the dish to cook. Cover tightly with foil. Bake 45 minutes. Uncover; sprinkle remaining cheese on top and bake about 15 minutes longer or until peppers are tender.
Cut a few thin slices from the zucchini and press them on the front of the peppers (it will stick). Cut the tips off of the black olives and press them on the zucchini slices. Cut strips from the remaining olives to make the hair, glasses, and mouth.
