Instant Pot Stuffed Pepper Soup
Stuffed pepper soup is way less of a hassle to make than making actual stuffed peppers, and I’m all about easy dinners. Not only is this easy, but also delicious! A combination of ground beef (or turkey), broth, tomato sauce and seasonings tossed in the Instant Pot and finished in just 10 minutes.

How to make Stuffed Pepper Soup in the Instant Pot
- Start out by turning your Instant Pot onto saute mode. Add the ground beef to the pot and add in the garlic powder, onion powder, Italian seasoning, salt, pepper, and paprika.
- Cook the seasoned ground beef for about 5 minutes until no longer pink.
- Once the beef is cooked you can turn the instant pot off. Next, you will pour in your beef broth and stir.
- Now add your broth, chopped bell peppers, tomato sauce, and rice to the pot. Place the lid on and set the valve to seal. Cook for 10 minutes on manual.
Tips:
- Use brown rice instead of white rice.
- You can add in some red pepper flakes for a bit of heat.
- The pressure cooker will take about 10 minutes to heat up.
- Once you put this stuffed pepper soup in the refrigerator IF you have any leftovers, it will thicken a bit. Just add a little bit more beef broth before heating back up and serving.

Ingredients
- 1 pound Lean Ground Beef or Turkey
- 1 teaspoon Onion Powder
- 1 teaspoon Garlic Powder minced
- 1/2 Tbsp Paprika
- 1 teaspoon Italian Seasoning
- 1/4 teaspoons Salt
- 1/2 teaspoon Pepper
- 3 Bell Peppers (2 red and 1 green) chopped
- 5 cups Beef Broth low sodium
- 1 Tbsp Worcestershire Sauce
- 3/4 cup Long Grain White Rice uncooked
- 15 ounce can Tomato Sauce
Instructions
- Set instant pot to saute and cook the ground beef (or turkey) including the garlic powder, Italian seasoning, onion powder, paprika, salt and pepper until no longer pink.
- Turn the Instant Pot off. Add the beef broth to the pot and stir, scraping the bottom of the pot. Add the diced peppers, tomato sauce, Worcestershire sauce and rice to the pot and stir. Place the lid on the Instant Pot and set the valve to sealing.
- Cook on manual high pressure for 10 minutes. Once the 10 minutes is up, let sit for 5 minutes, then, you can open the valve to do a quick release.
- Serve soup immediately and enjoy!

Hello! I’m looking forward to making this! If I want to add a can of diced tomatoes, would I need to adjust the amount broth or keep the same?
Hey Gina, just drain the diced tomatoes first and you should be good.
This recipe was very good and easy, I will definitely make it again! I used ground turkey and my husband couldn’t even tell because it was flavored so well. He typically likes ground beef better. One question, when/where do you add the Worcestershire sauce? It calls for 1 TBSP but in the directions it never tells you to add it…I left it out due to this and it was still great. I’d like to add it next time
