No-Bake Pineapple Dream Dessert

This light and fluffy pineapple cheesecake dessert can be easily transported to gatherings and always gets rave reviews. This easy desserts has a 15-20 prep time and perfect for spring or summer!

Just like our popular Strawberry Jello Pretzel Salad, this is a great recipe for taking to a party, holiday gathering, or a potluck.

Ingredients You Will Need:

  • Granulated Sugar
  • Butter
  • Graham Cracker Crumbs
  • Cream Cheese
  • Powder Sugar
  • Crushed Pineapple
  • Cool Whip
  • Shredded Coconut
  • Pineapple Chunks
  • Pineapple Extract

How To Make Pineapple Dream Dessert

Graham Cracker Crust Instructions

  1. In a medium mixing bowl, mix the crushed graham crackers, granulated sugar and melted butter until well combined.
  2. Press mixture into a 9 X 9 baking dish and set aside.

Pineapple Mixture Instructions

  1. Using a standing mixer, cream the cream cheese until smooth and creamy.
  2. Gradually mix in the powdered sugar until well combined.
  3. Mix in the Cool Whip and beat until fluffy.
  4. With a spatula, fold in the crushed pineapple.
  5. Spoon the filling over the crust, and smooth with a angled spatula until even.

  1. In a medium bowl, combine the Cool Whip, Pineapple extract and yellow food coloring. Mix until combined.
  2. Using an Angled Spatula, spread the topping evenly over the Pineapple filling.
  3. Sprinkle with toasted coconut and pineapple chunks.
  4. Refrigerate overnight for the pineapple dessert to firm up.

  • 1 cup granulated sugar
  • 1 cup unsalted butter melted
  • 2 1/2 cups graham cracker crumbs

Pineapple Filling Ingredients

Whipped Pineapple Topping Ingredients

  • 1/4 cup toasted shredded coconut for topping
  • 1/4 cup pineapple chunks for topping
  • 1 8 ounce Cool Whip
  • 1 teaspoon pineapple extract
  • 1-2 drops yellow gel food coloring

  1. Could whipped cream be used instead of Cool Whip? I really prefer the taste of a good, lightly sweetened heavy whipping cream beaten to stiff peaks to the chemical flavor of Cool Whip.
