Easy Oatmeal Bars

These protein-packed oatmeal peanut butter bars are tasty and have a wonderful texture from the oats. They are a great alternative to oatmeal cookies. Plus, they take almost no time to prepare! We use a prepackaged cookie mix in this recipe to save time and money, too.

What I love best about these bars is the flavor and texture. They are so chewy and taste amazing! Peanut butter and chocolate is one of the most classic combinations and that’s part of what makes this treat so irresistible. I like to grab a bar in the morning when I’m getting the kids ready for school or as a pick me up in the afternoon as a yummy snack. Kids enjoy them too so that’s a bonus!

Ingredients You’ll Need

Easy-to-find everyday ingredients are what we used to make these peanut butter oat bars. It’s such a versatile recipe, too. You will find exact measurements in the recipe card below as well as substitution suggestions to make these your own.

  • Oatmeal Chocolate Chip Cookie Mix: I like Betty Crocker.
  • Rolled Oats: Old-Fashioned oats also works great.
  • Semi-Sweet Chocolate Chips
  • Eggs – room temperature is best.
  • Peanut Butter: We use creamy peanut butter and feel free to use whatever brand you prefer!
  • Heavy Cream

How to Make Peanut Butter Oatmeal Bars

Making the dough takes a couple of minutes and the longest wait is baking. It’s worth it, though!

  • Prepare the Oven and Dish. Preheat the oven to 350 degrees F. Line the baking dish with parchment paper or spray with non-stick spray to prevent the bars from sticking or falling apart.
  • Mix Dry Ingredients. Add cookie mix, oats, and chocolate chips to a large bowl and whisk until well combined.
  • Add Wet Ingredients. With a hand mixer or stand mixer, beat in eggs, peanut butter, and heavy cream until a soft and thick dough forms.
  • Pour into Pan. Pour the dough into the baking pan and spread in an even layer with a spatula.
  • Bake. Place in the oven and bake for about 25-25 minutes. It should be baked all the way through and the edges golden brown.
  • Cool. Allow the oatmeal bars to completely cool before slicing and serving. Enjoy!

Equipment Needed

  • Baking Dish: I use a 9×9 for this recipe.
  • Parchment Paper: You can also use non-stick spray.
  • Mixing Bowl: One large bowl for the batter. 
  • Hand Mixer: If you have a stand mixer, you can use that instead. 
  • Measuring Tools: You only need 3 measuring cups.
  • Mixing Tools: Whisk, flat spatula, and a knife for cutting the oatmeal bars.

How to Store Oatmeal Peanut Butter Bars

Store leftover bars in an airtight container at room temperature. They will stay fresh for about 3-4 days. You can also freeze them in freezer bags, layered with parchment for up to 3 months. Just keep in mind that the longer they are frozen, the higher the chance they will become dry when thawed.

Substitute and Variations

  • Nut Free. Replace the peanut butter with almond butter, cashew butter, sunflower seed butter or wow butter.
  • Gluten-Free. Use a gluten-free oatmeal cookie mix as well as gluten-free oats.
  • Dairy-Free. Substitute the heavy cream with almond milk or oat milk.
  • Vegan. Make flax eggs by using 1 tbsp of ground flax seed with 3 tbsps of water for each regular egg.
  • Chocolate Chips. Instead of semi-sweet, you can use dark chocolate or even peanut butter chips.
  • Add-Ins. You can add dried fruit like raisins or cranberries. Coconut is another great option or nuts like pecans or walnuts.

Ingredients
  

  • 1 17.5 oz bag oatmeal chocolate chip cookie mix
  • 1 cup rolled oats
  • 1/2 cup semi-sweet chocolate chips
  • 2 large eggs
  • 1 cup peanut butter
  • 1/4 cup heavy cream

Instructions

  • Preheat the oven to 350 degrees Fahrenheit and line a 9×9 inch baking dish with parchment paper or spray with cooking spray.
  • In a large mixing bowl, whisk together the cookie mix, rolled oats and semi-sweet chocolate chips until combined.
  • Using a stand or hand mixer, beat in the eggs, peanut butter and heavy cream to form a thick dough.
  • Spread the mixture into the prepared pan and press into an even, thick layer.
  • Bake for 25-35 minutes or until cooked through and the edges are just starting to turn golden brown.
  • Allow the bars to cool completely before cutting into squares and serving.

  1. The recipes says “1/2 peanut butter” — I imagine you mean 1 half cup of peanut butter, but I wanted to make sure. Thanks!
