Peeps Cookie Bars is a yummy Easter dessert with chocolate chips and M&Ms. The perfect way to use that extra package of Peeps you didn’t eat!

Peeps Cookie Bars

This recipe is really similar to your usual chocolate chip cookie bars with one big (delicious) addition: Easter Peeps! Make sure you find the pastel colored M&Ms for the fun spring pop of color. These are usually in the holiday aisle of the grocery store.

I like cookie bars much more than traditional chocolate chip cookies because they’re just so much easier. You don’t have to scoop out the batter into individual even sized cookies, you just put the whole thing in!

Ingredients You’ll Need

  • Butter
  • Brown Sugar
  • Sugar
  • Eggs
  • Vanilla
  • Flour
  • Cornstarch
  • Baking Powder
  • Salt
  • M&Ms
  • Chocolate Chips
  • Peeps

How To Make Easter Cookie Bars

  • Start by melting your butter and mixing that with the sugars. Let that cool for a couple of minutes before adding in the eggs, egg yolk and vanilla extract.
  • In a separate bowl bowl whisk together flour, cornstarch, baking powder and salt. Then, add that to the sugar mixture.
  • Stir in the M&Ms and chocolate chips and pour the batter into a greased 9X13 dish.
  • After about 25 minutes when the cookie bars are finished cooking, pull the pan out and lay Peeps on top. Put them back in the oven for about 5 minutes to melt them on top.
  • Let these cool and enjoy!

Peeps Cookie Bars

  • Preheat the oven to 350 degrees.
  • Prepare a 9X13 pan by spraying it with a non stick baking spray.
  • Melt your butter in a microwave safe bowl for 30 seconds.
  • In a large bowl, add the butter, brown sugar and granulated sugar. Stir to combine.
  • Allow the butter mixture to cool for 2-3 minutes.
  • Add eggs, egg yolk and vanilla extract. Stir to combine.
  • In a separate medium sized bowl whisk together flour, cornstarch, baking powder and salt.
  • Add the flour mixture to the butter mixture. Stir to combine.
  • Add the chocolate chips and M&M's to the mixture. Stir to combine.
  • Pour the mixture into your prepared pan and spread out evenly.
  • Bake for 20-25 minutes.
  • Remove from the oven and carefully place Easter Bunny Peeps on top of the cookie bars.
  • Place back in the oven for 5-10 minutes.
  • Remove from the oven and let cool for 5-10 minutes.
