Pencil Cupcakes for Back to School

How cute are these pencil cupcakes for back to school? The sugar wafer pencils are so adorable! I love this recipe because it’s super fun and festive and pretty easy to make.

Anything I can do to make my kids even a little bit excited to start school back up is good in my book. These pencil cupcakes would also be a cool idea for an end of the year party!

Ingredients

Makes approximately 24 cupcakes

  • 1 box of yellow cake mix, any brand
  • 1/3 C. vegetable oil
  • 3 eggs
  • 1 C. water
  • 24 vanilla sugar wafers
  • 10 oz Wilton bright pink candy melts
  • 10 oz Wilton bright white candy melts
  • Chocolate chips
  • White frosting
  • White cupcake liners
  • Wilton 1M frosting tip
  • Disposable piping bag
  • Small paring knife

Pencil Cupcakes

Directions

  1. Preheat the oven to 350 degrees and line (2) 12 count muffin tins with cupcake liners.
  2. Combine the cake mix, vegetable oil, eggs and water.
  3. Fill the muffin wells 1/2 full and bake for 18-20 minutes.
  4. Around 18 minutes, insert a toothpick into the cupcakes, if it comes out clean the cupcakes are done.
  5. Remove the cupcakes from the oven and let cool.
  6. Line a large baking sheet with parchment paper.
  7. Take one vanilla sugar wafer at a time and gently slice both sides of the top to resemble the point of a pencil. Repeat with all the sugar wafers.
  8. Pour 1/2 of the bright pink candy melts into a microwave safe dish. Heat in 30 second increments, stirring until melted.
  9. Dip the bottom portion of the sugar wafer into the melted pink chocolate to resemble the pencil’s eraser and place on the parchment paper to set.
  10. Pour 1/2 of the bright white candy melts into a microwave safe dish. Heat in 30 second increments, stirring until melted.
  11. Dip the pointed end into the white chocolate allowing the excess to drip back into the bowl.
  12. Place the vanilla wafer back on the parchment paper to set for a few minutes.
  13. While the white chocolate is setting, use the paring knife to slice the chocolate chips in 1/2. Place a chocolate chip halve on the tip of the pencil.
  14. Repeat with all the sugar wafers.
  15. Attach the frosting tip to the piping bag and fill with white frosting.
  16. Frost each cupcake in a circular motion and place a pencil on top each cupcake.

And feel free to make things even easier on yourself by just making the cookie pencils and putting them on top of store bought cupcakes!
