Red velvet cake is a favorite for my family. Even though red velvet is essentially a chocolate cake with a red hue, they love it with plenty of added chocolate, like pretty much all red velvet fans. Who wouldn’t love a velvety and truly divine Red Velvet Cheesecake? It is made with buttermilk, cocoa, and butter, so you know how rich and flavorful it is. But for my money, the Granddaddy of all red velvet recipes on this blog is Red Velvet Nutella Stuffed Cookies.

Red Velvet Chocolate Chunk Bars

Making goodies with cake mixes is so darn handy when you need something tasty and you need it in a hurry. Has your kiddo ever told you the night before that they are supposed to bring 20 treats to school the next morning?

Sure they have. It must be in the “Welcome to Being a Kid Handbook” because it sure seems to be universal. Keeping these bars no your shortlist of emergency go-to confections will cement your place as the Queen of Moms.

Having a selection of cake mixes in your cupboard is nothing to be ashamed of! Some of the best sweets I’ve ever eaten started with a cake mix that was “doctored” to create something flavorful and yummy.

If you want to store some versatile cake mixes in your cupboard, try plain vanilla, plain chocolate, red velvet (naturally), and a butter flavored mix. Those are particularly easy because the flavors lend themselves so flawlessly to countless other ingredients.

How to Make Vanilla Extract

Real vanilla extract can be pricey, but you can slash the costs and always have incredible, authentic vanilla extract when you make your own. All you need is a jar, 7 whole vanilla beans, and 1 cup of plain 70 proof vodka.

Slice each bean long ways, put it in the bottle and pour 1 cup of vodka over it. It’s important to make sure the vodka covers the beans, so after you slice them, cut them into 2 or 3″ chunks if your beans are too tall.

Twice a week, for the next 8 weeks, pick up the jar and give it a good shake. It’s all set!

You can leave the beans in the jar and let it continue to flavor the vodka. Or you can remove the beans entirely.

My big tip for the absolute best vanilla extract ever is to use good vanilla beans! Get the best Madagascar beans you can afford.

Red Velvet Chocolate Chunk Bars

  • 2 Boxes Duncan Hines Red Velvet cake mix
  • 2 large eggs
  • 1 C unsalted sweet cream butter softened
  • 2 tsp vanilla extract
  • 1 1/2 C chocolate chunks plus 1/2 C to add to the topping

Instructions

Directions

  • Preheat the oven to 350 degrees and line a 9x13 baking dish with parchment paper
  • Using a standing mixer, beat together the cake mix, egg, butter and vanilla until combined
  • Fold in the 1 1/2 C of chocolate chunks
  • Press the batter into the baking dish and top with the remaining 1/2 C of chocolate chunks
  • Bake in the preheated oven for 35-45 minutes or until a toothpick comes out clean in the center
