These red velvet Nutella stuffed cookies are so good! This combines two of my top favorite things: Nutella and red velvet. What is not to love about these?
Red Velvet Nutella Stuffed Cookies
Ingredients
- 1 2/3 C flour
- 1/4 C cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 C unsalted sweet cream butter, softened
- 3/4 C packed light brown sugar
- 1/4 C sugar
- 1 egg
- 1 tbsp whole milk
- 2 tsp vanilla extract
- 1 3/4 tbsp red velvet extract
- 3/4 c chocolate chips, plus extra to melt for drizzle
- 18 tsp drops of Nutella
- 1 disposable piping bag
Directions
- Using a large bowl, mix together the flour, cocoa powder, baking soda, and salt. Set aside.
- Using a standing mixer, beat the butter and both sugars together until light and fluffy.
- Mix in the egg and beat well.
- Beat in the milk, vanilla, and red velvet extract
- Gradually add in the flour mixture and mix until combined.
- Fold in the chocolate chips.
- Chill the dough for an hour.
- Preheat oven to 350 degrees
- Using a cookie sheet fitted with parchment paper, drop teaspoon dollops of Nutella and freeze.
- Take out 1 tablespoon of dough and place a frozen teaspoon of Nutella onto the dough.
- Add another half tablespoon of dough over the Nutella and cover the dollop.
- Roll the dough between your hands to form a ball.
- Repeat the the remaining dough and Nutella. You may need to chill the dough again halfway through.
- Bake the cookies for 9 – 10 minutes.
- Using a microwave safe bowl, melt 1 cup of chocolate chips
- Scoop melted chocolate into the piping bag
- Cut the tip off and drizzle onto the cookie
- Let chocolate harden before enjoying!
