Red Velvet Nutella Stuffed Cookies

These red velvet Nutella stuffed cookies are so good! This combines two of my top favorite things: Nutella and red velvet. What is not to love about these?

Red Velvet Nutella Stuffed Cookies

Ingredients

  • 1 2/3 C flour
  • 1/4 C cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 C unsalted sweet cream butter, softened
  • 3/4 C packed light brown sugar
  • 1/4 C sugar
  • 1 egg
  • 1 tbsp whole milk
  • 2 tsp vanilla extract
  • 1 3/4 tbsp red velvet extract
  • 3/4 c chocolate chips, plus extra to melt for drizzle
  • 18 tsp drops of Nutella
  • 1 disposable piping bag

Red Velvet Nutella Stuffed Cookies

Directions

  1. Using a large bowl, mix together the flour, cocoa powder, baking soda, and salt. Set aside.
  2. Using a standing mixer, beat the butter and both sugars together until light and fluffy.
  3. Mix in the egg and beat well.
  4. Beat in the milk, vanilla, and red velvet extract
  5. Gradually add in the flour mixture and mix until combined.
  6. Fold in the chocolate chips.
  7. Chill the dough for an hour.
  8. Preheat oven to 350 degrees
  9. Using a cookie sheet fitted with parchment paper, drop teaspoon dollops of Nutella and freeze.
  10. Take out 1 tablespoon of dough and place a frozen teaspoon of Nutella onto the dough.
  11. Add another half tablespoon of dough over the Nutella and cover the dollop.
  12. Roll the dough between your hands to form a ball.
  13. Repeat the the remaining dough and Nutella. You may need to chill the dough again halfway through.
  14. Bake the cookies for 9 – 10 minutes.
  15. Using a microwave safe bowl, melt 1 cup of chocolate chips
  16. Scoop melted chocolate into the piping bag
  17. Cut the tip off and drizzle onto the cookie
  18. Let chocolate harden before enjoying!
