Every holiday gives me a great excuse to bake cookies! For Valentine’s Day this year we’ve made our favorite crinkle cookies with chocolate hearts on top and cookie dough hearts. Yum!

Anything red velvet always catches my eye. (You can probably tell by the amount of yummy red velvet recipes here!) It’s delicious and it’s something everyone loves.

Combine that classic flavor with white chocolate chips and a little crunch from the pink sugar and you’ve got one delicious cookie.

How to Make Cake Mix Cookies

Cake mix cookies are one of the best treats to make. They are fluffy and soft which is by far my favorite type of cookie.

Besides being delicious, they’re so easy to make. All you do is add oil and eggs to the red velvet cake mix. Three ingredients, that’s it!

Plus, unlike sugar cookies, we don’t need to roll out the dough. Just scoop and drop onto parchment paper. Seriously, could that be an easier?

For these particular cake mix cookies, we are adding white chocolate chips because everything is better with a chocolate chip on top. Plus, we’re rolling our dough balls in sugar sprinkles. So pretty!

Red Velvet White Chocolate Chip Cookies

Red Velvet White Chocolate Chip Cookies are an easy dessert to make for Valentine's Day! These cake mix cookies are moist and chewy, just like a good cookie should be!
Servings: 14

Ingredients
  

  • 1 16.5oz box red velvet cake mix
  • 1/3 C canola oil
  • 2 large eggs
  • 1 C Nestle white chocolate chips
  • 2 C pink and red sugar sprinkles

Instructions

  • Preheat oven to 350 and line two large cookie sheets with parchment paper and set aside.
  • Using a standing mixer, beat together the cake mix, oil, and eggs until fully combined.
  • Place dough into the fridge to harden for 30 minutes
  • Remove from fridge after the 30 minutes is up and scoop two tablespoon sized balls of cookie dough into your hand and roll into a ball
  • Add sprinkles into a bowl and roll dough ball into the sprinkles
  • Place onto the cookie sheet and repeat steps for 12 more cookies
  • Place cookie sheet into the oven for 8 minutes
  • Remove from oven and place chocolate chips onto the top of the cookies
  • Place back into the oven for another 2 minutes then allow to cool completely on a wire rack
  • Repeat steps with remaining dough
