Reindeer Cake

Making the cake layers is super easy to do, but as you can imagine, the decoration is a bit more complicated. Don’t worry, the directions will walk you through it all.

First of all, you’ll make a cake mix according to the box. The only difference, is we are going to use food coloring to dye half the batch red and half green.

Ingredients:

  • Cake mix
  • Eggs
  • Oil
  • Butter
  • Cream cheese
  • Cocoa Powder
  • Whipping Cream
  • Sugar
  • Chocolate melting chips
  • Fondant
  • Edible mist spray
  • Powdered sugar
  • White chocolate chips
  • Sugar sprinkles
  • Food coloring

What is fondant?

This reindeer’s antlers, nose and ears are all made from fondant. If you’re new to fondant, it’s a thick type of icing made from sugar and water. It’s consistency is more like a modeling clay so you can shape it and cut it into different sculptures.

Homemade Chocolate Frosting

To make this, mix the cream cheese and butter first, then add in cocoa powder and powdered sugar very slowly. Once combined, add in the heavy whipping cream until it’s smooth and fluffy.

Assembling the Reindeer Cake

Start with one layer of your red and green swirl cake. Then add a big dollop of frosting on top, then the next layer.

Ice the entire thing.

Add on your fondant ears, nose and antlers.

Use your frosting to pipe on the eye’s, hair and other decorations.

Take your time and leave yourself plenty of fondant to work with. It takes some time to get used to, but once you’ve got it you’ll be making creative cakes all the time! Enjoy.

Reindeer Cake

A Reindeer Cake with bright red and green layers is one of the most fun and festive Christmas cakes ever!

Ingredients
  

Snowflake Ingredients

  • 1 C Ghirardelli white chocolate melting chips
  • 1 disposable piping bag
  • 1 cookie sheet fitted with parchment paper

Antlers, Ears and Nose Ingredients

  • 1 box of Chocolate fondant
  • 1 box of white fondant
  • 1 medium Heart cookie cutter
  • 1 small heart cookie cutter
  • parchment paper
  • gold edible mist spray
  • powdered sugar

Reindeer Antlers Ingredients

  • 1 tub of chocolate fondant
  • 1 cutout of reindeer antlers
  • ½ C white chocolate chips melted
  • 1 disposable piping bag
  • 1 container of white sugar crystal sprinkles
  • Nose Ingredients
  • 1 tube of red fondant
  • 1 mini circle cutter

Cake Ingredients

  • 2 Boxes of french vanilla cake mix
  • 6 large eggs
  • 2 C water
  • 1 C canola oil
  • Red and green gel food coloring

Chocolate Frosting ingredients

  • 1 1/2 C unsalted sweet cream butter softened
  • 1 - 8 oz cream cheese soften
  • 1 1.2 Hershey special dark cocoa powder
  • 7 C powder sugar
  • 1/4 C heavy whipping cream

Instructions

Snowflake Directions

  • Melt the chocolate chips in a microwave on 30 second increments
  • Scoop into disposable piping bag
  • Cut the tip off
  • Pipe out about 10 thick snowflakes in different sizes
  • Allow to dry overnight!

Antlers, Ears and Nose Directions

  • Roll out the chocolate fondant and cut out two medium hearts
  • Set them aside.
  • Roll out the white fondant and cut out two small heart white fondant
  • Place the white hearts onto paper towels and spray with edible gold spray
  • Allow to dry overnight
  • Lightly dip your finger into water and dab the back of the gold heart
  • Place the gold hearts onto the chocolate hearts
  • Allow to dry

Antler Directions

  • Roll out the chocolate fondant onto a powdered sugar covered cutting board
  • Cut out the antlers
  • Allow to dry for 2 hours
  • Melt the white chocolate and then pour into the piping bag
  • Cut the tip off and pipe snow drips onto the antler ears
  • Sprinkle some white sugar crystals onto the white chocolate
  • Blow off excess sprinkles
  • Allow to dry overnight!

Nose Directions

  • Mold the red fondant into a ½ inch disk
  • Use the cookie cutter and cut a circle out of the red
  • Allow to dry

Cake Directions

  • Preheat the oven to 350 degrees and spray the cake pans with pam baking spray
  • Combine all ingredients for the cake into a standing mixer and mix until combined
  • Divide the cake batter into two bowls
  • Mix in a few drops of red gel food coloring into 1 bowl of cake batter and mix until combined
  • Mix in a few drops of green gel food coloring into the second bowl and mix until combined
  • Using the ice cream scooper, scoop some red or green cake batter into the pans
  • Alternate with the red and green cake batters between the three cake pans
  • Bake the cakes for 36-30 minutes or until a toothpick comes out clean
  • Allow cakes to cool completely

Frosting Directions

  • Using the standing mixer again, beat the cream cheese and butter until combined and smooth
  • Gradually mix in the cocoa powder
  • Very slowly, beat in the powdered sugar until combined
  • Whisk in the heavy whipping cream until the ice cream is smooth and fluffy
  • Scoop 1 cup of frosting into the large piping bag
  • Using the ice cream scooper, scoop out 4-6 scoops of frosting and smooth evenly on one layer of cake
  • Place another layer of cake on top and spread more frosting
  • Place the last layer on top and frost the remaining cake with remaining frosting
  • Using the large piping bag, pipe dollop of frosting onto the top of the cake and down the side for “Hair”
  • Place the fondant ears onto the top of the cake
  • Place the antler behind the ears
  • Using the black cake frosting, pipe the ears onto the front of the cake
  • Pipe a medium size dot onto the back of the red circle and place in the center of the cake for the nose
  • Carefully remove the white chocolate snowflakes and randomly place all over the “Hair”
  • Using the red and green cake frosting, pipe “Holly” around for decorations
  • Pipe white dots around the hair for snow
  • Sprinkle some white crystal sprinkles around the cake
  • Cut and enjoy!
