Ingredients you will need:

  • french vanilla cake mix
  • eggs
  • butter
  • whole milk
  • vanilla extract
  • Teal, Pink, Purple and leaf green gel food coloring
  • Clear cupcake liners
  • Muffin pan
  • Twist lollipops: Bubblegum flavored
  • Nonpareil’s and sprinkle Jimmies

How to make Unicorn Cupcakes?

These Unicorn Cupcakes are so pretty with the colorful swirled cake and frosting. They may look intimidating to make, but they are actually very easy.

  1. You start off by making French Vanilla Cupcakes from your favorite mix or recipe. You then divide the batter into four separate bowls to add the food coloring.
  2. Once you have the colored batter ready, scoop about 1 tablespoon of each color into the cupcake liners while rotating colors until the liners are 3/4 full.
  3. Next, bake the cupcakes and allow to cool before adding the colorful swirled frosting!

How to Make Unicorn Frosting?

Making the swirled frosting for the Unicorn Cupcakes is similar to making the cupcakes.

  1. Once you have the Buttercream Frosting made, divide it into 4 separate bowls to add the food coloring.
  2. Once the colored frosting is made, scoop each color into a piping bag while keeping it separate from the other colors, like the piping bag was divided into 4 sections lengthwise.

  • powder sugar
  • vanilla
  • heavy whipping cream
  • teal, pink, purple and leaf green gel food coloring
  • 1 disposable piping bag with a star tip

Unicorn Cupcakes

These unicorn cupcakes are so cute! Kids are obsessed with all things unicorn. These would be so perfect for a Unicorn birthday party or a fun day of baking together in the kitchen!

Ingredients
  

Unicorn sprinkle mix:

  • 1 pouch of Light green, Hot Pink, and Purple Nonpareil's and sprinkle Jimmies

Cupcakes:

  • 1 box french vanilla cake mix
  • 3 large eggs room temp
  • 1/2 C softened unsalted butter
  • 1 C whole milk
  • 1 TBSP pure vanilla extract
  • Teal, Pink, Purple and leaf green gel food coloring
  • Twist lollipops: Bubblegum flavored

Frosting:

  • 1 C unsalted butter softened
  • 2 1/2 C powder sugar
  • 1 tsp vanilla
  • 3-5 TBSP heavy whipping cream
  • teal, pink, purple and leaf green gel food coloring

Instructions

Unicorn sprinkle mix:

  • Combine all sprinkles into a sealed container and shake until combined

Cupcakes:

  • Preheat oven to 350.
  • Line muffin pan with the white cupcake liners
  • In a medium bowl, add the cake mix, butter, milk, and vanilla extract and stir until combined
  • Divide the batter into 4 bowls and add a food color gel into each bowl.
  • Add the Teal to one bowl,
  • Next, add the Purple food coloring to the second bowl.
  • Then add the Pink food coloring to the third bowl.
  • Add the leaf green food coloring to the fourth bowl
  • Begin to fill the cupcake liners.
  • Scoop about 1 tbsp of each colored batter into the cupcake continue to rotate colors until it is 3/4 of the way full.
  • Bake in the oven for about 18-20 minutes.
  • Pull out the cupcakes and allow to cool before frosting.

Frosting:

  • Using a stand mixer, combine all ingredients and mix on medium speed.
  • Mix until you see stiff peaks in your frosting.
  • Once the frosting is made, split it into 4 bowls
  • Add about 2-4 drops of each color:
  • Add the Teal to one bowl,
  • Next, add the Purple food coloring to the second bowl.
  • Then add the Pink food coloring to the third bowl.
  • Add the leaf green food coloring to the fourth bowl, mixing until combined
  • Place the piping bag into a large glass and fold the sides of the bag over.
  • Scoop one spoonful of the Teal frosting onto one side of piping bag.
  • Scoop one spoonful of the Pink frosting onto another side of the piping bag
  • Scoop one spoonful of the Purple frosting onto the other side of the piping bag
  • Scoop one spoonful of the leaf green frosting onto the last side and squeeze the icing together.
  • Frost the cooled cupcakes.
  • Sprinkle a little bit of the unicorn sprinkles onto the top of the cupcakes
  • Place a lollipop into the center of the cupcakes
