Valentine Sandwich Cookies

I love making these Valentine Sandwich Cookies. They look like little Valentine stained glass windows! Plus, they taste so good with the strawberry jelly combined with cookies and icing. Yum!

Valentine Sandwich Cookies

makes 24 cookies

Ingredients

  • 3 C flour
  • 1 TBSP baking soda
  • 1 tsp cream of tarter
  • 1 C unsalted sweet cream butter, softened
  • 1 ½ C powder sugar
  • 1 large egg, room temp
  • 2 tsp vanilla extract, divided
  • 2 egg whites
  • 1/4 tsp cream of tarter
  • 2 C powder sugar
  • 1 disposable piping bag fitted with number 2 tip
  • 1 squeeze bottle
  • 1 container of pink sanding sugar
  • 2 C Strawberry preserves jam
  • 1 heart cookie cutters
  • 1 mini heart cookie cutter

How To Make Valentine Sandwich Cookies

  1. Preheat oven to 350 degrees. Line large cookie sheet with parchment paper.
  2. Combine flour, baking soda, and cream of tarter into a large bowl. Whisk ingredients together and set aside.
  3. Using an electric mixer, beat the butter and sugar, egg and 1 tsp of vanilla extract until creamy.
  4. Slowly add the flour mixture, one cup at a time, stirring to combine after each addition.
  5. Once combined, lightly flour a cutting board and knead the dough until combined
  6. Roll dough out to 1/4 inch thick
  7. Cut 24 heart cookies
  8. Using the mini heart, cut out a heart into the middle of 12 regular size cookies
  9. Bake the cookies for 15 minutes
  10. Once baked, let cookie cool completely

Icing Directions:

  1. Using the standing mixer, combine the egg whites, cream of tarter, powder sugar and vanilla
  2. Mix until combined and stiff with peaks on medium speed. about 7 minutes
  3. Scoop some icing into the piping bag
  4. Add 1-2 tbsp of water into the remaining icing and mix until smooth
  5. Pour into the squeeze bottle

Decorating instructions:

  1. Using the piping bag, outline the cookies with the cut out heart
  2. Fill in cookies with the thinned icing in the squeeze bottle
  3. Pour the sugar sprinkles onto a plate or a medium bowl
  4. Carefully dip the icing part of the cookie into the sprinkles
  5. Carefully pick up the cookie and place back onto the cookie sheet
  6. Repeat steps with remaining cookies, once all have been icing and dipped in the sprinkles set aside for an hour for the icing to harden
  7. Using the solid cookies, scoop about 1 tbsp of jelly into the middle and spread slightly with a knife
  8. Place the heart cookie coated in sprinkles on top of the heart with the jelly and slightly push down so that the hearts will stick together.
  9. Let cookies sit for 5 minutes before enjoying!
  10. Enjoy your delicious Valentine sandwich cookies!
