Valentines Sugar Cookie Bars with a delicious layer of icing on top is a great Valentine’s treat.

If you’re doing some Valentine’s Day baking add this one to your list! These are a favorite at my house right along with Cookie Dough Hearts and Cake Batter Fudge. Every holiday is an excuse to bake in my world.

Valentines Sugar Cookie Bars

These sugar cookie bars are incredibly soft. It’s like a mixture between a cookie and a cake. Eat it like a cookie or put it in a bowl with a scoop of strawberry and whipped cream. What a great Valentine’s Day treat!

Plus, I love that we add sprinkles not just on top for decoration, but in the dough. It adds a fun crunch!

Making Sugar Cookie Bars

One thing you’ll notice about these is that the layer of frosting is almost as thick as the cookie. You can never have too much icing, especially when its homemade sweet cream icing. Of course, if you want you can make it a thinner layer.

You could also change the food coloring and sprinkles to any color you want to work for a different holiday or a birthday party. You can make these Valentine sugar cookie bars your own!

Valentines Sugar Cookie Bars

Valentines Sugar Cookie Bars are the best way to celebrate Valentine's Day! Enjoy these thick, chewy sugar cookies with silky vanilla frosting.

Ingredients
  

Cookie ingredients:

  • 1 cup unsalted sweet cream butter softened
  • 2 cups sugar
  • 4 large eggs
  • 2 teaspoons pure vanilla extract
  • 4 3/4 cups flour
  • 1 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 2 containers of Wilton springtime pearlized jimmies
  • 1 bag of Wilton pink heart sprinkles

Cookie Directions

  • Preheat oven to 350 degrees and line a 9×13 baking dish with parchment paper.
  • Using a standing mixer, cream together the butter and sugar until fluffy.
  • Beat in the eggs and vanilla.
  • In a large mixing bowl, whisk together the flour, salt, and baking soda.
  • Gradually mix in to the wet ingredients.
  • Fold in one container of sprinkles into the dough.
  • Scoop dough into the prepared baking dish and lightly flatten with your hands.
  • Place into the oven and bake for 20-30 minutes or until lightly golden brown.
  • Remove from oven and allow to cool completely.

Frosting directions

  • Using a standing mixer, beat together the butter, powdered sugar, vanilla, and heavy whipping cream.
  • Beat on medium speed until smooth and stiff peaks form.
  • Beat in a few drops of pink food coloring until combined.
  • Using a angled spatula, frost the top of the cookie bars.
  • Sprinkle with the remaining sprinkles.
  • Cut into bars and enjoy!
