Slow Cooker Black Eyed Peas

Slow Cooker Black Eyed Peas on New Year’s Day are a family tradition we’ve been following for as long as I remember. It’s full of flavor with onion, garlic and ham. It will warm you on a cold winter day, for sure.

Ingredients

  • 1 yellow onion diced
  • 1 Tbsp minced garlic
  • 1 lb dried black eye peas
  • 1 1/2 cups chopped ham
  • 5 slices cooked bacon
  • 2 14 ounce cans fire roasted tomatoes
  • 7 cups chicken broth
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 Tbsp fresh parsley

Instructions

  • Add the dried beans to the slow cooker (no need to pre-soak).
  • Add the chopped onion, garlic, black eye peas, bacon, chopped ham, tomatoes and chicken broth in the slow cooker.
  • Cover and cook on HIGH for about 7 hours.
  • Sprinkle on salt and pepper to taste. Garnish with parsley.
