We made this cute Mickey Mouse Quesadilla for dinner and my boys loved it! It’s also great way to get them to eat their black beans!

This is a really easy dinner idea and the kids can have fun creating their own Mickey Quesadilla!

Mickey Mouse Quesadilla Dinner

Our family just got back from Disney and had the best time! We spent Thanksgiving day at Magic Kingdom and it was really busy, but the weather was great! My boys and I have made lots of Disney fun food in the past, but were inspired to make Mickey Mouse for dinner one night early last week after packing for our Disney trip.

Ingredients You’ll Need

  • 2 Tortillas
  • Black Beans
  • Brown Rice
  • Shredded Cheese
  • Salsa

How To Make A Mickey Quesadilla

  • Sprinkle cheese and brown rice in between the two tortillas and then microwave or grill until cheese is melted.
  • Cook the black beans and then decorate the face.
  • Cut some of the black beans in half using kitchen scissors for the sides of the mouth.
  • Leave an opening in the mouth and add salsa to look like his tongue.

  3. So cute! We will be heading on our first Disney trip next year. I may have to copy this lunch as an intro to my kiddo for the trip.

Oh my gosh, this is too fun! I think I may have to make these for my fiance and me (we're 26 and 22 but looovvvee Disney–so much so that we got engaged at Cinderella's Castle in Disney World and are honeymooning at Disney Land :). Thanks for sharing!
