Easy Key Lime Bars

These Key Lime Bars are a variation on traditional lemon bars and have the perfect amount of tart and sweet. They are SO good! The tender cookie base holds a puckery lime filling that gets a little extra kick from grated lime zest. You can use fresh limes or  bottled key-lime juice.

 These dessert bars need nothing more than a dusting of confectioners’ sugar, and they make the perfect dessert for barbecues, picnics, and summer parties!

Ingredients You Will Need:

  • Flour – use all-purpose flour.
  • Sugar – you will need granulated sugar and powdered sugar.
  • Butter – make sure you use unsalted butter.
  • Salt
  • Eggs – you will need 4 eggs.
  • Key Lime zest
  • Baking powder
  • Lime juice – regular lime juice will also work if you do not have key lime.

How To Make Key Lime Bars

  • Preheat the oven to 350 degrees.
  • Mix shortbread ingredients and press into baking dish.
  • Bake the crust for 10 minutes
  • Mix the key lime filling ingredients.
  • Pour mixture onto the crust and return to oven to bake until set.
  • Once the bars are cooled sprinkle with powder sugar and cut into squares.
  • Top with key lime slices and enjoy!

Key Lime Bars

These easy Key Lime Bars are so delicious with the perfect amount of tart and sweet. The ideal dessert for barbecues, picnics, and summer parties!
Servings: 12 bars
Prep: 10 minutes
Cook: 35 minutes

Ingredients
  

  • 2 C flour
  • 1/2 C powder sugar
  • 1 C unsalted sweet cream butter softened
  • 1/2 tsp salt
  • 4 eggs
  • 2 C sugar
  • 2 tsp Key Lime zest
  • 1/2 tsp baking powder
  • 1/3 C lime juice
  • 1/4 C flour

Instructions

  • Preheat the oven to 350 degrees and spay your 9×11 baking dish with pam spray
  • In a large bowl, combine the 2 C of flour, 1/2 C powder sugar and salt
  • Using a pastry cutter or fork, cut in the butter until the crust mixture looks like crumbs
  • Pour the crust into the pan and pat evenly into the dish
  • Bake the crust for 10 minutes
  • While the crust is baking make the filling
  • In another large bowl, whisk together the eggs, lime juice, 1/4 C flour, 2 C sugar, 2 tsp key lime zest, baking powder
  • Whisk until fully incorporated
  • Pour mixture onto the crust and return to oven and bake for 25 minutes or until set
  • Once the bars are cooled sprinkle with powder sugar and cut into squares
  • Top with key lime slices and enjoy!
