Apple Pie Mini Cheesecake Bites are a delicious combo of flaky apple pie and creamy cheesecake. This triple layered treat starts with a graham cracker crust and ends with a homemade crumble topping.
These tiny cheesecakes are really fun to make and serve. I love that these are individually wrapped and I don’t have to slice them.

Apple Pie Mini Cheesecake Bites
In the Fall, one of my favorite flavors is apple. Pumpkin spice seems to get all the attention, but for me, it’s always apple.
Sometimes, when we see a long ingredient list we get nervous a recipe will be difficult. Trust me, this is not. You simply need to make three different mixtures and take time layering, cooking and chilling. Plus, these mini apple pies are well worth it!
Crust Ingredients
- Graham Cracker Crumbs
- Butter
- Sugar
Cheesecake Ingredients
- Cream Cheese
- Sour Cream
- Sugar
- Vanilla
- Salt
- Eggs
Crumble Ingredients
- Sugar
- Brown Sugar
- Cinnamon
- Salt
- Butter
- Flour
- Apple Pie Filling
How To Make Apple Pie Mini Cheesecake
- Crust. Make a simple graham cracker crust with butter, sugar and crumbs. Press the mixture into cupcake liners in a muffin tin.
- Cheesecake. Mix your cheesecake filling and scoop 2.5 tablespoons over the crust. Bake and put in the fridge to chill.
- Topping. Cut some of the apples from the filling into smaller pieces and mix all the ingredients together. Add to the chilled cheesecake and enjoy.

Ingredients
Graham Cracker Crust Ingredients
- ¾ C graham cracker crumbs
- 1 ½ tbsp sugar
- ¼ C unsalted butter melted
Cheesecake Filling Ingredients
- 2 - 8 oz cream cheese softened
- ½ C sugar
- ½ C sour cream
- ¾ tsp pure vanilla extract
- ⅛ tsp kosher salt
- 2 large eggs
Crumble Topping Ingredients
- ½ C light brown sugar
- ¼ C sugar
- 1 tsp ground cinnamon
- ¼ tsp kosher salt
- ½ C unsalted butter melted
- 1 ¼ C flour
- 1 - 21 oz can of Apple pie filling
Instructions
Crust Directions
- Preheat oven to 325 degrees and line a cupcake pan with cupcake liners
- Using a medium bowl, combine all ingredients and mix until combined
- Using a tablespoon, scoop the crust into the cupcake liners
- Using a flat bottomed round cup, press the cup into the crust to maka firm crust
- Set aside
Cheesecake Directions
- Using a hand mixer, beat together the sugar and cream cheese until combined and smooth
- Beat in the sour cream, vanilla and salt until combined
- Beat in 1 egg at a time until combined
- Scoop 2 ½ tbsp of the cheesecake mixture into the crust
- Bake in the oven for 17-22 minutes or until the edges are firm and a really light golden brown starts to form
- Allow the cheesecakes to cool for a few hours in the fridge
Crumble Directions
- Combine all ingredients into a medium bowl
- Using your fingers, mix ingredients together until combined and crumble like
- Topping the cupcake
- Remove some Apple pie filling and cut the apple slices into small chunks
- Spoon some filling onto the top of the cupcakes
- Sprinkle some crumble on top
- Enjoy!
