Cinco de Mayo Cupcake Cones

We have had so much fun making our fun food creations for Cinco de Mayo this week! We came up with these Cinco de Mayo Cupcake Cones yesterday and my boys thought they were awesome! They are so easy to make and would be perfect for Cinco de Mayo parties! We used caramel corn rice cakes for the hats instead of cookies to cut down on the sugar. My boys love rice cakes…especially my 2 year old!:)

Cinco de Mayo Cupcake Cones
(makes 2)

Ice Cream Cones
Yellow Cake Mix (we like Pillsbury)
Chocolate Frosting
Rice Cakes (Caramel Corn from Quaker)
Large Marshmallows (we like Jet-Puffed)
Yellow Sprinkles
Tootsie Rolls
Edible Eyes
Chocolate & Red Cookie Frosting

Start out by making your cupcake cones. You can get full directions on how to make cupcake cones from our Creepy Cupcake Cones post for Halloween HERE! Let them cool when you are done baking. Frost the tops with chocolate frosting. We placed the rice cakes on a glass so we could easily decorate the edges using our red cookie frosting. Brush a little bit of water on the large marshmallows and dip in the yellow sprinkles. Attach to the sombrero using the red cookie frosting and decorate the sides. We decorated the face with edible eyes and broke off a piece from the rice cake for the nose. Place a Tootsie Roll in the microwave for 8 seconds. Cut it in half and shape the halves into a mustache. Attach with chocolate cookie frosting.

You could also just make the rice cake sombreros and these would be cute by themselves….
