My Cinnamon Toast Crunch Cake is a wonderful combination of a classic moist cake recipe and your favorite breakfast cereal.  Cinnamon flavor throughout with bits of crunchy cereal is topped with a light and fluffy cinnamon buttercream made from scratch.  You will love this delicious cake!

Cinnamon Toast Crunch Cake

If you have kids in the house, then you know that there is likely a box of cereal somewhere.  Cinnamon Toast Crunch is a family-favorite cereal, and it transfers easily into a cake like this one.  Adding bits of cereal to the icing and throughout the cake add texture to an already moist cake.  Topping it with some homemade icing makes it even better, and a truly pretty cake to serve to friends and family.

Cinnamon is a great addition to any dessert, in my opinion, but this recipe is one of the best.  It is versatile year-round but definitely is delicious in the fall months when a hot cinnamon drink is popular alongside a piece of this cake.

Can I Use Ready-Made Icing for this Cake?

If you want to make this cake even easier to make, you can use premade, store-bought frosting. I recommend adding cinnamon to the frosting because this will bring in the same flavors of the homemade icing.

A jar of icing isn’t as good as homemade, but it can cut back on your time spent in the kitchen, and with the addition of cinnamon and bits of cereal, it will be hard to tell you didn’t make it from scratch.

Can I Freeze This Cinnamon Toast Crunch Dessert?

If you find that you have more cake than you can eat before it goes stale, or you want to be able to have a slice of cake whenever the craving hits, you can freeze this Cinnamon Toast Crunch Dessert.

Since this cake is frosted already, you will want to take your slices of cake and freeze them on a plate or baking sheet. Once the cake is frozen, you can wrap it in plastic without worrying that the wrap will stick to the frosting. Once you are ready to thaw, simply remove the plastic first and then allow it to thaw in the refrigerator overnight.

  • Flour
  • Baking powder
  • Kosher salt
  • Ground cinnamon

  • Butter
  • Powdered sugar
  • Ground cinnamon
  • Pure vanilla extract
  • Heavy whipping cream
  • Cinnamon Toast Crunch cereal

How to Make a Cinnamon Toast Crunch Cake

To begin making this cake, you will want to preheat your oven and spray the cake pans with non-stick cooking spray, or baking spray that includes flour.

In a large bowl, you will whisk together the flour, baking powder, cinnamon, and salt.

In a separate bowl or stand mixer, you will beat together the butter and the sugar.  Next, you will beat in the eggs, one at a time, making sure to scrape the bowl regularly to incorporate everything well.

Mix in the vanilla extract, then begin adding in the dry ingredients.  You will alternate dry ingredients with buttermilk, mixing both gradually until combined.

Pour the batter into your cake pans, and bake as directed.

Frosting Directions

While the cakes are baking, use a mixer to combine all of the frosting ingredients except for the cereal.  Beat until this is smoothe and fluffy.

How to Assemble the Cake

Once the cakes have cooled completely, you will remove them from the pans and trim them so each layer is flat on top.

Place on the cake on your cake board or cake stand, and add icing to its top.  Smoothe the icing in an even layer before adding the second cake and repeat the process.  Add the third cake, then spread icing over the top and down the sides of the cake.

You will smoothe the frosting over the sides of the cake until the cake is covered and the frosting is smooth.

Crush some cereal, and then sprinkle over the sides and top of the cake.

Using a piping bag, you can add dollops of frosting to the cake, and add more cereal to each dollop of frosting.

Cinnamon Toast Crunch Cake

This Cinnamon Toast Crunch Cake is a great moist cinnamon cake topped with homemade cinnamon buttercream frosting and cereal bits for a perfect dessert!

Ingredients
  

Cinnamon Cake Ingredients

Cinnamon Frosting

  • 3 C unsalted butter softened
  • 6 C powder sugar
  • 1 TBSP ground cinnamon
  • 2 tsp pure vanilla extract
  • 3-6 tbsp heavy whipping cream
  • 4 C Crushed Cinnamon toast crunch cereal
  • 1/4 C non crushed cinnamon toast crunch cereal

Instructions

Cake Directions

  • Preheat oven to 350 degrees and spray 3 9inch baking pans with pam bakings spray
  • Using a medium bowl, whisk together the flour, baking powder, cinnamon and salt until combined
  • Using a standing mixer, beat together the butter and sugar until combined and fluffy
  • Beat in the eggs, one at a time
  • Beat in the vanilla
  • Alternate between the dry ingredients and buttermilk. Gradually mix in both ingredients until combined
  • Divide the batter between the 3 cake pans
  • Bake for 30 minutes or until a toothpick comes out clean
  • Allow to cool completely

Frosting Directions

  • Using a standing mixer, beat together all ingredients except the cereal
  • Beat frosting ingredients until smooth and fluffy

Building the cake Directions

  • Remove cakes from cake pans and cake off the domes from the cakes to make an even round cake layer
  • Place one cake layer onto the cake board
  • Scoop 1 C of the frosting onto the top of the cake layer and spread evenly
  • Sprinkle 1 C crushed cinnamon toast crunch cereal onto the top of the first layer of frosting
  • Place the second cake layer on top of the first
  • Spread evenly another C of frosting
  • Sprinkle 1 C of crushed cereal on top
  • Place the last layer of cake on top of the second layer
  • Scoop 1 C frosting into piping bag and set aside
  • Using remaining cake layer, frost entire cake
  • Coat the bottom of the cake in the crushed cereal
  • Using the piping bag, pipe dollops of the frosting on top
  • Sprinkle some crushed cereal on top
  • Cut into slices and enjoy!
