Dr Seuss Green Egg Meringue Cookies

Makes 25 cookies

Ingredients

  • 4 egg whites
  • 1/2 tsp cream of tartar
  • 1/2 C sugar
  • 3/4 C powdered sugar
  • 1 tsp vanilla
  • leaf green food coloring
  • 2 disposable piping bags
  • cookie sheet fitted with parchment paper

Directions

  1. Preheat oven to 225 degrees
  2. In a standing mixer, combine the egg whites and cream of tartar
  3. Mix until soft peaks start to form
  4. Continue to mix while alternating between the two sugars, add 1 TBSP at a time, ending with powder sugar
  5. Continue to mix until stiff peaks form
  6. Scoop 1/2 cup of the meringue into a bowl and add a few drops of green food coloring and mix until combined
  7. Scoop into one piping bag
  8. Scoop the rest of the meringue into the second piping bag.
  9. Cut the tip off the piping bag and pipe out an egg shape onto the cookie sheet.
  10. Depending on how big you pipe the eggs, you can about 6-12 onto a cookie sheet
  11. Cut the tip off the green piping bag and pipe a small dot onto the white meringue.
  12. Bake in the oven for 1 hour minutes
  13. Let cool for a few minutes before enjoying!
