Kids love these Dr Seuss Green Egg Meringue Cookies. They taste delicious but they really do look like eggs! This would be so fun for a Dr. Suess party or a school lesson.

Dr Seuss Green Egg Meringue Cookies
Makes 25 cookies
Ingredients
- 4 egg whites
- 1/2 tsp cream of tartar
- 1/2 C sugar
- 3/4 C powdered sugar
- 1 tsp vanilla
- leaf green food coloring
- 2 disposable piping bags
- cookie sheet fitted with parchment paper
Directions
- Preheat oven to 225 degrees
- In a standing mixer, combine the egg whites and cream of tartar
- Mix until soft peaks start to form
- Continue to mix while alternating between the two sugars, add 1 TBSP at a time, ending with powder sugar
- Continue to mix until stiff peaks form
- Scoop 1/2 cup of the meringue into a bowl and add a few drops of green food coloring and mix until combined
- Scoop into one piping bag
- Scoop the rest of the meringue into the second piping bag.
- Cut the tip off the piping bag and pipe out an egg shape onto the cookie sheet.
- Depending on how big you pipe the eggs, you can about 6-12 onto a cookie sheet
- Cut the tip off the green piping bag and pipe a small dot onto the white meringue.
- Bake in the oven for 1 hour minutes
- Let cool for a few minutes before enjoying!
