Easter Cadbury Cookies

I can’t wait to make these Cadbury cookies for Easter! These sugar cookies are filled with a delicious homemade chocolate frosting and then topped with miniature Cadbury eggs (one of our favorite Easter treats). These are great for a class party or Easter brunch!

Cookie Ingredients:

  • 1/2 C Unsalted sweet cream butter, softened
  • 1/2 C sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 1 1/2 C flour
  • 1/4 tsp baking powder
  • 1 cookie sheet fitted with parchment paper

Chocolate Frosting:

  • 1 tbsp unsalted sweet cream butter
  • 3 tbsp cocoa
  • 1 C powdered sugar
  • 1 tsp vanilla
  • 2 – 3 tbsp hot water
  • 24 mini Cadbury eggs

Cadbury Cookies

Directions:

  1. Heat oven to 350 degrees.
  2. In a standing mixer, beat together butter and sugar until creamy.
  3. Mix in egg and vanilla.
  4. In a medium bowl, mix together the flour, baking powder and salt.
  5. Gradually mix the dry ingredients into the wet ingredients.
  6. Using a small ice cream scoop, scoop out some dough and roll dough into small balls.
  7. Place onto the cookie sheet and bake for 8-10 minutes
  8. Remove from oven and quickly press thumb into the top of each cookie.
  9. Remove cookies from cookie sheet and cool completely on a wire rack.

Chocolate Frosting:

  1. Melt butter in small mixing bowl in microwave.
  2. Mix in cocoa, powdered sugar, vanilla and hot water.
  3. Mix until smooth and creamy.
  4. Spoon the chocolate frosting into each thumbprint and top with a mini Cadbury egg.
  5. Enjoy!

    Hi.. these look amazing and I’m going to try them for Easter. From making other things you have posted I know this recipe will also be a five-star. But, could you tell me what you used to make that perfectly round imprint in your cookies to fill with the chocolate? My thumbprints never look that perfect! Thank you.
