This Margarita Cake is like a full margarita cocktail in cake form. Yes, it’s got lime and tequila!

I love a good margarita recipe. If I’m going to have a cocktail, that’s what I’ll be ordering. Why not take my love of the drink and make it into a cake?! After all, I did turn my love of Baileys Irish Cream into a cake!

Margarita Cake

This cake is a delicious vanilla recipe with lime juice, lime zest and yep, tequila (a whole cup). You can use whichever brand of Tequila you’d like – we used Patron this time. Just use whatever you’ve got laying around.

Another key ingredient in this is the vanilla. Always use real vanilla and not imitation. It’s easy to spot, just look for the word ‘pure’ on the bottle. The flavor is a game changer.

This margarita cake would be great for a birthday party – I know I would love to blow the candles out on this cake! I’ve seen so many fun taco theme 30th and 40th birthday parties that this would be perfect for.

Also it would be fun to make for Cinco de Mayo as well. Heck, this cake is great anytime.

Margarita Cake

Ingredients
  

Cake Ingredients

  • 6 cups flour
  • 1/2 teaspoon baking soda
  • 3 1/2 teaspoons baking powder
  • 2 teaspoons kosher salt
  • 3 cups unsalted butter softened
  • 4 cups sugar
  • 4 large egg whites
  • 3 teaspoons pure vanilla extract
  • 1 1/2 cups Whole milk
  • 1/2 cup lime juice
  • 1 cup tequila
  • 4 tablespoons lime zest
  • Lime slices for decorating
  • Lime zest for decorating

Frosting Ingredients

  • 3 cups unsalted butter softened
  • 3 cups shortening
  • 12 cups powdered sugar
  • 3 tablespoons grated lime zest
  • 6 tablespoons fresh lime juice
  • Lime slices for decor
  • Sugar sprinkles for decor

Instructions

Directions

  • Preheat the oven to 350 degrees and grease cake pans with baking spray, set aside.
  • In a large bowl, combine the flour, baking soda, baking powder and salt.
  • Using a standing mixer, cream the butter and sugar until light and fluffy.
  • Beat together the egg whites and vanilla until combined.
  • Gradually beat in the flour ingredients and milk until combined.
  • Beat in the lime juice, tequila, and lime zest until combined.
  • Divide the batter between the 3 cake pans.
  • Bake in the oven for 25-30 minutes or until a tooth pick comes out clean.
  • Allow the cakes to cool completely.

Frosting Directions

  • Using a standing mixer, combine all ingredients into the mixer and beat until combined, smooth and stiff with peaks.
  • Scoop 1 C of frosting into the piping bag and set aside.

Decorating Directions

  • Using the cake leveler, remove the domes from the cakes to level them out.
  • Place one cake round onto the cake board.
  • Scoop 1 C of frosting onto the cake and smooth evenly.
  • Place the second cake round onto the top of the frosting.
  • Scoop 1 C of frosting onto the second cake layer and smooth evenly.
  • Place the last cake round onto the top of the frosting.
  • Using the remaining frosting, frost entire cake.
  • Pipe dollops of frosting onto the top of the cake.
  • Place Lime slices onto the frosting.
  • Zest a lime all over the top of the cake.
  • Place into the fridge for an hour to allow the frosting to harden up a bit.
  • Cut into slices and enjoy!
