This simple Mint Chocolate Chip Layer Cake is a delicious way to satisfy your mint chocolate chip cravings. Incredibly easy to make, this green colored cake will look fantastic on a St. Patrick’s Day Buffet or as part of a green celebration.

Mint Chocolate Chip Layer Cake

This simple layer cake is a vanilla based cake, colored mint green, that has mint chocolate chips and chocolate frosting. With this cake, the vanilla flavored cake mixes with the mint chocolate chips to give it multiple flavors.

Ingredients You Will Need

  • White cake mix
  • Eggs
  • Water
  • Canola oil
  • Mint chocolate chips
  • Mint green food coloring
  • Semi sweet chocolate chips
  • Unsalted butter
  • Powdered sugar
  • Hershey Cocoa Powder
  • Pure vanilla extract
  • Heavy whipping cream
  • Mini chocolate chips
  • Waffle cone bowls
  • Maraschino cherries

How to Make Mint Chocolate Chip Layer Cake

Spray the cake pans with baking spray and preheat the oven to 350 degrees.

Using a mixer, combine the cake ingredients and beat is well.

Mix in the chocolate chips and food coloring.

Divide the cake batter between the 3 cake pans and bake for 28-32 minutes until the cake is done. It is done when you insert a toothpick in the center comes out clean.

Allow to the cake to cool completely before removing it from the pans and moving it onto the cake board

Use a cake leveler to remove the domes and make the cakes even.

Next, make the chocolate frosting using a mixer.

Beat together the butter, powdered sugar, cocoa powder, vanilla and whipping cream until it is smooth and has formed stiff peaks.

Scoop 1/2 cup of frosting into a piping bag before assembling the cake.

Place the cake on the cake board and scoop 1 cup of frosting onto the cake and smooth it evenly.

Put the next layer on top of the cake, add another cup of frosting and spread it evenly.

Place the third layer of cake on top and frost the cake completely.

Add mini chocolate chips along the bottom of the cake.

Use the frosting in the piping bag and pipe dollops of frosting along the top of the cake.

Place the broken pieces of waffle cone behind each dollop of frosting.

Place a cherries into the center of the frosting dollop and then sprinkle mini chocolate chips on the cake.

Can This Be a Mint Cake

While this cake is a vanilla cake that has mint chocolate chips in the cake itself, you can also make the cake itself mint flavored. Add a teaspoon of mint extract to the cake batter. If you like a stringer mint flavor, you can another teaspoon.

How Can This Mint Chocolate Chip Cake Be Decorated

This cake is frosted with a homemade chocolate frosting. It is then topped with chocolate chips and has broken pieces of waffle cone on top. This cake has a mint chocolate chip ice cream flavor and using the waffle cones gives this cake a fun twist. Top each dollop of frosting with cherries.

Chocolate frosting

  • 2 C unsalted butter softened
  • 5 C powdered sugar
  • ½ C Hershey Cocoa Powder
  • 2 tsp pure vanilla extract
  • 3-6 TBSP heavy whipping cream
  • 1 Large piping bags with star tip
  • 1 mini angled spatula
  • 2 C mini chocolate
  • 1 package of waffle cone bowls broken into pieces
  • 1 8 oz jar of Maraschino cherries

Instructions

  • Preheat the oven to 350 degrees and spray the 3 cake pans with pam baking spray
  • Combine all cake ingredients into a standing mixer or large mixing bowl and beat until combined
  • Mix in the semi sweet chocolate chips and mint food coloring
  • Divide the batter between the 3 pans and bake in the oven for 28-32 minutes or until a toothpick comes out clean
  • Allow to cool completely before moving onto the cake board
  • Using a cake leveler, remove the dome from the cakes to make even
  • Using a standing mixer, beat together the butter, powdered sugar, cocoa powder, vanilla, and heavy whipping cream until combined, smooth and stiff with peaks
  • Scoop ½ C of frosting into the piping bag

Building the cake directions

  • Using 1 cake layer on the cake board, scoop 1 C of frosting onto the top of the cake and spread evenly
  • Place the second layer of cake on top of the first layer of frosting.
  • Scoop another 1 C of frosting onto the second layer of cake and spread evenly.
  • Place the last layer of cake on top
  • Frost entire cake with the remaining chocolate frosting
  • Scoop a handful of mini chocolate chips onto the bottom of the cake
  • Pipe dollops of chocolate frosting around the top
  • Place a broken piece of the waffle cone behind the frosting dollop
  • Place a cherrie into the center of the frosting dollop
  • Sprinkle some mini chocolate chips around the top of the cake
  • Cut and enjoy!
