This is my families new favorite weekend breakfast. Muffin Mix Pancakes are super easy to make, needs just 2 ingredients and allows you have a lot of creative fun in the kitchen. Did you realize you could make delicious pancakes from a muffin mix?

Pancakes made with a Muffin Mix
The best part of this whole thing, besides how yummy they are, is that all you need is two simple ingredients. These pancakes don’t take any more work than a regular pancake mix, but add lots of extra fun flavor.
You can even take it a little further and add some mix-ins, too, like chocolate chips, diced fruit, a sprinkle of cinnamon or a drop of vanilla extract. You really can get creative and make these totally your own!

Ingredients You Need
- Milk – you’ll need just half a cup.
- Muffin Mix – your choice of flavors! The Martha White brand has a lot of choices. We have tried:
- Chocolate Chip — my kids favorite
- Strawberry
- Banana Nut
- Blueberry
- Wildberry — my personal favorite
- Cinnamon Sugar
Yep — that’s all you need. A little bit of milk and a package of muffin mix.

How To Make Muffin Mix Pancakes
- Make batter. Mix the muffin mix and milk in a bowl with a fork until it’s completely mixed.
- Prep the pan. Warm your pan or griddle up over medium heat and coat it with butter.
- Make pancakes. Just like your usual pancake making, pour some batter onto the pan, cook until the edges set and flip!
Muffin Mix Pancakes cook up just like regular pancakes. Serve them up with some butter, warm maple syrup, a glass of milk and maybe a side of fruit or bacon. Such a great family breakfast!

Next on my list of Martha White muffin mixes to try are Chocolate Chocolate Chip, Birthday Cake and Strawberry Cheesecake. They come out with new flavors all the time so I’m keeping my eye out at the grocery store. Which ones sound the best to you?

Muffin Mix Pancakes
Ingredients
- 1 pkg muffin mix your choice of flavors
- ½ cup milk
Instructions
- Place dry muffin mix in a small mixing bowl. Add milk; stir with a fork until well combined.
- Pre-heat pan over medium heat. Add a small amount of butter and spread to coat bottom of pan.
- Once heated, spoon batter into pan to form 3 to 4-inch diameter circles. Cook until edges appear set ; flip with a spatula and continue cooking 1-2 minute until cooked through. {Usually when cooking pancakes, bubbles rising up through the batter are a sign it’s time to flip them.)
- Repeat with any remaining batter.
- Serve with maple syrup, if desired.

These are awesome! I ran out of pancake mix today and was about to make them from scratch. Noticed I had a bunch of muffin mixes and thought “I wonder if I can make pancakes out of them?” Googled it and you’re the first recipe I chose because your pancakes looked like the triple berry muffin mix that I have the most of and your recipe doesn’t include a fee to read the recipe, and doesn’t say to add eggs to it. Because of course I’m out of eggs too. They were delicious and now I’m looking at other recipes on your page and definitely going to be trying some. Thank you for making my day so much easier.

Hi Jill. We don’t sell the muffin mixes but you may be able to purchase them on Amazon.
For us it needed another 1/4 c of milk – we like them flatter! Very easy and fast.
How much muffin mix? What size pkg??
We use the pouches. I’m pretty sure they are 7 ounces.

These pancakes are so much fun to make since the muffin mix comes in so many different flavors. You can also add diced fruit, chocolate chips, nuts, seeds and whatever else you like in your pancakes for endless variations!

I have been wondering for the past week if I made these muffin mix as pancakes what they would taste like. So I Google it, and this was the first one I seen. I was so excited when you said you and ur family make them. So I ran to my cabinet to see what u had. I had chocolate chip/banana, or Chocolate chocolate chip. So I seen at the end you said the next one you wanted to try was the chocolate chocolate chip. So, that is going to be my first one trying. I also am gonna add some little reese’s peanut butter chips into it, just to see what its like. I will be walking an extra 5 miles after this breakfast, but IDC. I have a happy feeling its going to be soooooo worth it. THANK YOU…..
