These pumpkin spice sugar cookie bars are delicious and is going to quickly become your fall favorite. They’re a delicious mixture of a pumpkin cookie and cream cheese frosting. They just melt in your mouth!

Pumpkin Spice Sugar Cookie Bars

Bar Ingredients

  • 1 9×13 parchment paper lined baking dish
  • 1 C unsalted sweet cream butter, softened
  • 1 1/4 C sugar
  • 2 large eggs, room temperature
  • 2 tsp pure vanilla extract
  • 1 C canned pumpkin puree
  • 3 1/4 C flour
  • 2 tsp pumpkin pie spice
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Frosting Ingredients

  • 1 8 oz package of cream cheese, softened
  • 1/2 C unsalted sweet cream butter, softened
  • 2 tsp vanilla
  • 2 1/2 C powder sugar
  • 1/2 tsp cinnamon
  •  harvest melody sprinkles



Pumpkin Spice Sugar Cookie Bars

 

Directions

  1. Preheat your oven to 350 degrees and line your baking dish with parchment paper.
  2. Using a standing mixer, cream together the butter and sugar
  3. Add in the eggs, pumpkin pure, and vanilla extract
  4. Mix until combined
  5. In a large bowl, combine the flour, pumpkin pie spice, baking powder and salt. Using a whisk mix until combined
  6. Gradually add in the flour mixture into wet mixture until combined
  7. Scoop batter into parchment paper lined baking dish
  8. Spray pam spray on your hand so that you can flatten down the batter into the pan with getting the batter on your hands
  9. Place into the oven and bake for 20 minutes
  10. Once baked, place onto a wire rack to cool to room temperature
  11. Using the standing mixer, combine the butter, vanilla and cream cheese and mix until combined
  12. Add in the cinnamon and powder sugar and mix until combined and fluffy
  13. Scoop the frosting onto the cooled cookie and smooth it out.
  14. Sprinkle the harvest sprinkles onto the frosting and place into the fridge for an hour for the frosting to harden
  15. Cut into bars and enjoy!

  • 8 oz package of cream cheese softened
  • 1/2 C unsalted sweet cream butter softened
  • 2 tsp vanilla
  • 2 1/2 C powder sugar
  • 1/2 tsp cinnamon
  • wilton harvest melody sprinkles
