Rainbow Sherbert Cake Recipe

This Rainbow Sherbert Cake is so simple to make and the taste is amazing. While this cake doesn’t actually have sherbert in it, it has all the same flavors of the well loved dessert. Top the cake with homemade buttercream, cherries, and waffle cones.

Rainbow Sherbert Cake Recipe

I have seen cakes that are made with sherbert to give them a fantastic flavor. But, I don’t want to give up the sherbert. I want a cake that has all the same flavors but didn’t take my ice cream away. With all the same flavors, this cake is sure to become a family favorite.

Ingredients

  • Cake mix– You want a vanilla or white cake mix and the ingredients needed to make the cake.
  • Orange, Strawberry, and Lime Cake Flavoring – This is to give the cake the flavors of the sherbert
  • Neon Green, Pink, Orange food coloring- As you add the flavoring to the cake batter, you will use the food coloring to color the cake to match.
  • Powdered sugar- The powdered sugar is the base of the frosting
  • Heavy cream- Heavy cream is used to thin the frosting to the desired consistency.
  • Unsalted butter- Always use unsalted butter so that you can control the salt in a recipe.
  • Vanilla extract-Always use pure vanilla extract for a better flavor.
  • Maraschino cherries- Sherbert and Cherries go together perfectly.
  • Waffle cone- The waffle cone is used to tie the flavors of the cake together with the sherbert’s appearance.
  • Cake sprinkles-A beautifully decorated cake needs sprinkles.

How to Make a Rainbow Sherbert Cake

  • Make the cake mix according to the box and then split it into 3 bowls.

  • Add the food coloring and the flavoring to each bowl and mix it together well.
  • Add the cake batter to the prepared pans using a cookie scoop alternating between colors.

  • Bake the cake for 22 minutes or until it is done.
  • Next, make the frosting by combining all of the ingredients on low until it is smooth.
  • Spread the frosting over the cooled cake.
  • Then create dollops of frosting to resemble whipped cream and add a cherry on top.

Can I Freeze Sherbert Cake?

I love freezing cake. It is a great way to make sure there is always cake in the house. I like to freeze the cake in slices on a plate. Then once the frosting is frozen, I will wrap it well with plastic wrap and store it in a freezer bag. Freezing the cake on a plate first keeps the frosting from sticking to the plastic.

Does This Cake Have Actual Sherbert In The Ingredients?

This cake has similar flavors of sherbert thanks to the addition of the cake flavorings but it does not use actual sherbert in the cake itself. This is a fun twist on a traditional cake.

Rainbow Sherbert Cake Recipe

Ingredients
  

  • 1 cake mix- White / Vanilla made as directed on the box
  • 1 drop Orange Cake Flavoring
  • 1 drop Strawberry Cake Flavoring
  • 1 drop Lime Cake Flavoring
  • 1 drop Neon green food coloring
  • 1 drop Pink food coloring
  • 1 drop Orange food coloring

Cake Directions

  • Preheat the oven to 350 degrees.
  • Spray a 9×12 baking dish with non stick baking spray.
  • Add cake mix, eggs, oil, and water into the mixing bowl.
  • Stir to combine.
  • Split the cake batter into 3 small bowls.
  • Add 1 drop of neon green food coloring and 1 drop of lime flavoring.
  • Stir to combine.
  • Add 1 drop of orange food coloring and 1 drop of orange flavoring.
  • Stir to combine.
  • Add 1 drop of pink food coloring and 1 drop of strawberry flavoring.
  • Add the cake batters to the baking dish by using a 1 small ice cream scoop of batter at a time.
  • Alternate 1 flavor at a time, filling the baking dish until it is ¾ full.
  • Bake for 22-24 minutes or until baked through, check with a toothpick.
  • Add all ingredients to a large mixing bowl.
  • Mix on low speed for 2-3 minutes until ingredients are combined.
  • Then mix on medium speed for an additional 3 minutes until frosting is peaking, meaning that it is holding its shape.
  • Spread the frosting evenly over the top of the cake.
  • Using a piping bag and a large star tip create dallops on top to look like whip cream.
  • Garnish with cherries, waffle cones, and sprinkles.
  • ENJOY!!
