Strawberry Cake Mix Cookies with Strawberry Lemon Glaze

Ingredients

  • Cake Mix– You will need strawberry cake mix for this recipe.
  • Eggs– Use these at room temperature.
  • Oil– Use canola or vegetable oil.
  • Vanilla– Use pure extract for the best flavoring.
  • Powdered Sugar– This sugar is great for homemade icing.
  • Strawberries– These will need to be chopped to prepare.
  • Lemon Juice– Use freshly squeezed lemon juice or water for the glaze.

How to Make Strawberry Cake Mix Cookies

To start, set the oven to 350 degrees.

First, add the strawberry cake mix eggs, oil, and vanilla into a large mixing bowl, and combine using a fork or hand mixer.

Secondly, use parchment paper to line a baking sheet.

Thirdly, using your hands or cookie scoop, create dough balls with 1 tablespoon of the cookie dough and arrange on to the prepared baking pan, about 2-inches apart.

Next, place the cookies into the oven for 10 minutes, or until they just begin to turn a light brown. Make sure not to overbake.

Finally, take the cookies out of the oven and allow them to cool on the baking sheet, while you make the glaze.

Glaze:

To start, add the strawberries and lemon juice into a food processor or blender and combine.

Next, combine the strawberry mixture and powdered sugar until smooth. And, if the glaze is too thin, you can add a bit more of the powdered sugar, and if it’s too thick, just add more juice or water.

Transfer the cookies to a wire rack and top with the strawberry glaze.

Ingredients
  

  • 1 box of strawberry cake mix I used betty crocker
  • 2 eggs
  • 1/4 cup canola oil or vegetable oil
  • 1 teaspoon pure vanilla extract

Strawberry Lemon Glaze

  • 2 cups powdered/confectioners sugar
  • 1/3 cup strawberries chopped
  • 1 tablespoon lemon juice or water

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, combine the strawberry cake mix, eggs, oil, and vanilla together and mix well (you can use a fork or a hand mixer).
  • Line a baking sheet with parchment paper and create 1 tablespoon cookie dough balls with a cookie scoop and put the cookies about 2” apart on the baking sheet.
  • Bake for 10 minutes - or until the edges start to brown. Do not overbake.
  • Remove from the oven and let the cookies cool on the baking sheet while you make the glaze.
  • To make the glaze, blend strawberries and lemon juice together in a food processor or blender.
  • Add strawberry mixture to powdered sugar and mix until smooth (if the glaze is too thin, add powdered sugar. If it’s too thick, add more lemon juice or water).
  • Transfer cookies to a cooling rack and spoon glaze on top of cookies.
  • Once cooled, sprinkle with powdered sugar (optional).

Notes

Feel free to skip the glaze and just sprinkle cookies with powdered sugar after they cool. 
For the glaze, blend the strawberries to a puree, or leave larger chunks.
