These Unicorn Cookie Cups look like little cupcakes but they’re sneaky! They’re delicious little cookies filled with yummy sweet cream frosting and of course, topped with sprinkles and a unicorn horn. How cute would these be at a kiddos unicorn birthday party??

Unicorn Sugar Cookie Ingredients

Frosting Ingredients

  • 1 C unsalted sweet cream butter, softened
  • 2 1/2 C powder sugar
  • 1 tsp vanilla
  • 3-5 TBSP heavy whipping cream
  • 1 disposable piping bag with a star tip
  • 1/2 C unicorn sprinkle mix
  • Unicorn Horn Icing Decorations (Bought from Hobby Lobby)

Sugar Cookie Directions

  1. Preheat oven at 350º F.
  2. Spray the cupcake pan with pam baking spray, set aside
  3. Using a standing mixer, combine cake mix, vegetable oil, and 2 eggs until combined.
  4. Divide the batter into three separate bowls.
  5. Mix Pink food coloring into one bowl
  6. Mix Purple food coloring into the second bowl
  7. Mix Teal food coloring into the third bowl
  8. Take about 1 TSP of each color of dough and form into tablespoon sized balls.
  9. Pour sanding sugar into a bowl.
  10. Roll the cookie dough into the sanding sugar then place into the mini cupcake pan.
  11. Bake for 7 to 8 minutes.
  12. Once the cookies come out of the oven, press down the back of 1 tbsp into the cookies to make an indent for the frosting.
  13. Allow cookies to completely cool.

Icing Directions

  1. Using a stand mixer, combine all ingredients (Except the sprinkles) and mix on medium speed.
  2. Mix until you see stiffed peaks in your frosting.
  3. Scoop the frosting into the piping bags

Decorating Directions

  1. Pipe the frosting into the indent of the cookies
  2. Sprinkle with the unicorn sprinkles
  3. Place a horn into the middle of the frosting
  4. Enjoy your adorable Unicorn Cookie Cups!

Ingredients
  

Unicorn Sugar Cookies:

  • 1 box white cake mix
  • 1/3 C Canola oil
  • 2 large eggs
  • Pink, Purple, Teal gel food coloring
  • 1 pouch of Light green, Hot Pink, and Purple Nonpareil's and sprinkle Jimmies (bought from Michaels craft stores)
  • 1 container of Pink sanding sugar
  • Pam baking spray

Frosting:

  • 1 C unsalted sweet cream butter softened
  • 2 1/2 C powder sugar
  • 1 tsp vanilla
  • 3-5 TBSP heavy whipping cream
  • 1/2 C unicorn sprinkle mix
  • Unicorn Horn Icing Decorations Bought from Hobby Lobby
