Prepare a pie crust, then press it into a 9" pie plate.
Cook the onions, garlic + seasonings in butter. Add cream and broth.
Stir in chicken, carrots, potatoes, and peas.
Pour filling into the crust, then roll the second pie crust over top. Trim and crimp the edges to seal.
Score the top of the pie, then brush the crust with an egg wash.
Bake at 425ºF for 30-35 minutes, until golden.
