Unicorn Whoopie Pies
Your kids are going to love these unicorn whoopie pies! Even if you’re not a unicorn fan, these funfetti sprinkle cookies are delicious.

Frosting:
- 1/2 C unsalted sweet cream butter softened
- 1 1/2 C powder sugar
- 1 tsp vanilla extract
- 4 tbsp heavy whipping cream
- blue, pink and purple food gel
Whoopie pies:
Preheat your oven to 350 degrees
In a standing mixer, combine all ingredients except the sprinkles and mix until combined and smooth
Using a rubber spatula, mix in the sprinkles
Using the ice cream scoop, scoop out some dough and roll it into a ball
Place dough ball onto the cookie sheet and lightly push down into a thick disk
Repeat steps with remaining dough
Bake in the oven for 8-10 minutes or until lightly golden brown
Once baked, set aside and allow to completely cool
Frosting:
Using the standing mixer, combine all ingredient except the food gel.
Mix on medium speed until creamy and stiff with peaks
Split the frosting into 3 bowls and add a few drops of the food coloring into a bowl each.
Mix the frosting until the color is completely mixed.
Scoop the frosting into a piping bag and cut the tips off
Pair up the cookies
Using the bottom of one cookie pipe a small dollop of frosting
Sandwich the cookies and enjoy!
