Unicorn Whoopie Pies

Your kids are going to love these unicorn whoopie pies! Even if you’re not a unicorn fan, these funfetti sprinkle cookies are delicious.

Ingredients

Cookies:

Frosting:

  • 1/2 C unsalted sweet cream butter softened
  • 1 1/2 C powder sugar
  • 1 tsp vanilla extract
  • 4 tbsp heavy whipping cream
  • blue, pink and purple food gel

Instructions

Whoopie pies:

  • Preheat your oven to 350 degrees
  • In a standing mixer, combine all ingredients except the sprinkles and mix until combined and smooth
  • Using a rubber spatula, mix in the sprinkles
  • Using the ice cream scoop, scoop out some dough and roll it into a ball
  • Place dough ball onto the cookie sheet and lightly push down into a thick disk
  • Repeat steps with remaining dough
  • Bake in the oven for 8-10 minutes or until lightly golden brown
  • Once baked, set aside and allow to completely cool

Frosting:

  • Using the standing mixer, combine all ingredient except the food gel.
  • Mix on medium speed until creamy and stiff with peaks
  • Split the frosting into 3 bowls and add a few drops of the food coloring into a bowl each.
  • Mix the frosting until the color is completely mixed.
  • Scoop the frosting into a piping bag and cut the tips off
  • Pair up the cookies
  • Using the bottom of one cookie pipe a small dollop of frosting
  • Sandwich the cookies and enjoy!
