Red Velvet Loaf

This red velvet loaf with a delicious cream cheese frosting is so good! It’s super easy to make and is covered with chocolate and crushed candy canes.

Ingredients

  • 1 box red velvet cake mix
  • 3 eggs
  • 1/3 C canola oil
  • 1 1/2 C mashed bananas

Frosting:

  • 1 C unsalted sweet cream butter softened
  • 4 oz cream cheese softened
  • 3 C powder sugar
  • 3 tbsp heavy whipping cream
  • 1 tsp vanilla
  • 1 C chocolate shavings
  • 1/2 C crushed candy canes

Instructions

Loaf:

  • Preheat oven to 350 degrees
  • Grease a loaf pan and set aside
  • In a standing mixer, combine the dry cake mix, oil, eggs, and mashed bananas
  • Pour into the loaf pan and bake for 40 minutes
  • Place onto a wire rack and let cool to room temperature

Frosting:

  • Using a standing mixer, combine all ingredients and mix on medium speed until combined and stiff peaks
  • Scoop frosting into the piping bag
  • Place loaf out of pan onto a cutting board
  • Pipe the frosting all over the loaf
  • Sprinkle with chocolate shavings and candy canes
  • Let frosting harden for about 10 minutes before enjoying.
