Ingredients:
- ½ cup sour cream
- 1 ½ block cream cheese
- 2-3 tbsp buffalo sauce
- Juice of one lime
- 1 tbsp cumin
- 1 cup shredded pepper jack cheese
- 2 cups frozen or canned whole kernel corn
- ⅓ cup chopped cilantro
Topping Ingredients:
- ⅓ cup pepper jack cheese
- ⅓ cup crumbled feta
- 1 tsp Tajin seasoning
- Fresh chopped cilantro extra feta, and limes for garnish
Instructions:
In a large bowl, beat together sour cream, cream cheese, buffalo sauce, and lime juice with an electric mixer.
Fold in cheese, corn, cilantro, and cumin.
Grease an 8-10 inch cast iron or enameled skillet with butter, and spread your corn mixture into it evenly.
Top with a layer of pepper jack, feta, and Tajin, then bake at 350 degrees for 20 minutes, or until top is bubbly and starts to turn golden brown.
Remove from oven, sprinkle with cilantro, feta, and sliced limes. Serve warm with tortilla chips.
