Ingredients

Crust:

  • 2 cups flour
  • ½ cup sugar
  • ½ cup butter cubed
  • 1 egg
  • 1 tablespoon milk

Filling:

Topping:

  • 2 cups flaked coconut
  • 2 eggs
  • 2 tablespoons butter melted
  • 1 teaspoon vanilla

Instructions

  • Preheat oven to 350F. Grease an 8x8 inch baking pan. Set aside.

Crust:

  • In a large bowl whisk together the flour and sugar.
  • Cut in the butter cubes until the mixture resembles coarse crumbs.
  • Add the egg and milk and mix to form a dough.
  • Press the dough into the prepared pan and bake for 20 minutes, until lightly golden.
  • Spread the raspberry jam filling over the warm crust.

Topping:

  • In a medium bowl lightly beat the eggs.
  • Mix in the melted butter and the vanilla.
  • Add the coconut and stir to combine.
  • Spread the coconut mixture over the jam filling and bake for 25 minutes.
  • Cool completely in the pan before cutting into squares.
