In a large bowl, add flour, baking powder, and salt, whisk to combine
Separate eggs whites and yolks into 2 bowls
Add milk, egg yolks, and oil to dry ingredients and whisk until smooth
In a small bowl, whisk the egg whites until very foamy
Fold egg whites into waffle batter until incorporated, but don’t overbeat
Heat waffle iron and spray with non-stick cooking spray
Using a pourable measuring cup or ladle, fill waffle iron with batter
Cook for 5-8 minutes or until golden brown, depending on a waffle maker
Remove and serve immediately with syrup, powdered sugar, or fruit
