Strawberry Scones

Scone Ingredients:

Egg Wash for top of scones:

  • 1 large egg
  • 1 tbsp water
  • 2-3 tbsp sugar

Directions:

  • Preheat the oven to 400 degrees.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • Add in the cubes of butter, and stir together until the flour mixture has small flakes and the butter is well combined into the mixture.
  • In a separate bowl, whisk together the egg, milk, and heavy whipping cream, until it is well combined.
  • Pour the egg mixture into the flour and butter. Stir together with a rubber spatula or large spoon until it forms into a ball of dough.
  • Add in the strawberries and stir until they are evenly combined into the dough.
  • Turn the dough out onto a lightly floured surface and roll into a round shape, about 1 inch thick and 8-9 inches in diameter.
  • Cut the dough into 8 even wedge shaped slices and place them onto a baking sheet lined with parchment paper.
  • Brush the tops of each scone with the egg wash, and then sprinkle sugar on top.
  • Place in the oven and bake for 16-18 minutes, until the tops of the scones turn golden brown.
  • While the scones are baking, in a medium bowl, whisk together the powdered sugar, heavy whipping cream, and vanilla. Continue to whisk ingredients until the frosting is a smooth white glaze. Set the bowl aside until the scones are done baking.
  • When scones are golden brown, remove them from the oven and drizzle the frosting glaze over the scones.
