Preheat oven to 350 degrees and line two cookie sheets with parchment paper
Using a large bowl, combine the melted butter, eggs, chocolate cake mix, and 1 C chocolate chips
Using a small cookie scoop, scoop some dough and place it onto the cookie sheet
Bake in the oven for 9-11 minutes or until the tops look firm
Remove from oven and allow to cool
Chocolate Ganache Directions
Using a small pot, bring the heavy whipping cream to a simmer
Pour 1 C of chocolate chips into a heat-safe bowl.
Pour the hot cream over the chocolate chips and let it sit for 1 minute before whisking until smooth
Pour the ganache into a squeeze bottle
Place the cookies onto a wire rack over a cookie sheet
Squeeze a nice size amount of the ganache onto the top of the cookies and allow it to pour over the cookies
Sprinkle a few mini chocolate chips on top of the cookies
Allow the ganache to set before enjoying the cookies!
