Line a 9x9 baking dish with parchment paper and lightly spray with cooking spray
Using a medium sauce pan, combine the white chocolate chips, milk chocolate chips, and sweetened condensed milk
Place over medium heat and mix until combined and smooth
Mix in the red food coloring
Pour the fudge into the prepared baking dish and set aside
Using a small sauce pan, heat up the heavy whipping cream over medium heat
Place the semi sweet chocolate chips into a heatproof glass bowl
Once the whipping cream starts to simmer pour over the chocolate chips and allow to sit for 1 minute
Whisk the chocolate chips and heavy whipping cream until smooth
Pour the ganache over the top of the red velvet fudge
Place into the fridge over night before cutting into 1 inch squares.
