I am loving this spiced rum bacon and chocolate bundt cake! Why didn’t I think of combining, chocolate, bacon and rum sooner?

Ingredients

  • 1 box Chocolate Devil's Food cake mix 18.25 oz
  • 1 box Instant chocolate pudding mix 3.9 oz
  • 4 large Eggs room temp
  • 1/2 cup Water
  • 1/2 cup Vegetable oil
  • 1/2 cup Spiced Rum
  • 1 cup chopped cooked bacon
  • 1 cup chocolate chips
  • 1/2 cup peanut butter chips
  • 1/2 cup unsalted Butter room temp
  • 1 cup Granulated Sugar
  • 1/4 cup Spiced Rum
  • 1/4 cup water

Garnish:

  • 1/2 cup chopped cooked bacon
  • 1/2 cup chocolate chips

Vanilla Rum Icing:

  • 1/2 cup butter
  • 3 cups powder sugar
  • 1/4 cup Spiced rum
  • 1/4 cup water

Instructions

  • Preheat oven to 325 degrees F (165 degrees C).
  • Grease one 10 inch Bundt cake pan.
  • In a large bowl with a electric mixer, beat cake mix, pudding mix, eggs, cup oil, water, and 1/2 cup spiced rum on high speed for 2 minutes.
  • Add the bacon, chocolate chips, and peanut butter chips, stir to combine.
  • Pour batter into the prepared pan.
  • Bake at 325 degrees F for 50-60 minutes.
  • Let cake stand for 20 minutes and then turn out onto a serving dish.
  • Make the Vanilla spiced rum glaze.
  • In a medium bowl combine butter, sugar, 1/4 cup of rum, and cup of water.
  • Mix until well combined.
  • Pour over the cake.
  • Garnish
