Canned Tomato Salsa

Ingredients

  • 2 14½ oz cans Red Gold lime juice & cilantro petite diced tomatoes
  • 1/2 medium onion
  • 4 cloves garlic
  • 1 jalapeño pepper deseeded
  • 1 tsp salt
  • 1 tsp freshly cracked black pepper
  • blue chips
  • shredded cheese
  • sour cream
  • refried beans

Instructions

  • Strain tomatoes and reserve juice. Roughly chop onion, fresh garlic, and jalapeño; add to your food processor.
  • Add juice from tomatoes, lime juice, salt, pepper, and granulated garlic. Process on high for about 30 seconds.
  • Add about ½ cup of diced tomatoes and process on low for an extra 5 seconds. Add remaining tomatoes and pulse until desired consistency is reached. It's ready to serve immediately, but you can also let it chill in the refrigerator overnight to let the flavors combine.
  • Now for the fun Patriotic Appetizers.
  • Start out by heating up a bowl of refried beans. Take a spoonful of beans and place them in the bottom of your blue star chip. Top with shredded cheese. Add the canned tomato salsa on top.
  • Spoon some sour cream in a baggie & snip off the corner with kitchen scissors. Pipe on a star shape on top of the chips.
