Skillet Mexican Corn Dip

  • ½ cup sour cream
  • 1 ½ block cream cheese
  • 2-3 tbsp buffalo sauce
  • Juice of one lime
  • 1 tbsp cumin
  • 1 cup shredded pepper jack cheese
  • 2 cups frozen or canned whole kernel corn
  • cup chopped cilantro

Topping Ingredients:

  • cup pepper jack cheese
  • cup crumbled feta
  • 1 tsp Tajin seasoning
  • Fresh chopped cilantro extra feta, and limes for garnish



  • In a large bowl, beat together sour cream, cream cheese, buffalo sauce, and lime juice with an electric mixer.
  • Fold in cheese, corn, cilantro, and cumin.
  • Grease an 8-10 inch cast iron or enameled skillet with butter, and spread your corn mixture into it evenly.
  • Top with a layer of pepper jack, feta, and Tajin, then bake at 350 degrees for 20 minutes, or until top is bubbly and starts to turn golden brown.
  • Remove from oven, sprinkle with cilantro, feta, and sliced limes. Serve warm with tortilla chips.
