Chocolate Caramel Cereal Bars Recipe

Ingredients

Cereal Mixture

  • 1/2 cup Butter
  • 1/2 cup Peanut butter
  • 1/2 cup Butterscotch chips
  • 2.5 cups Marshmallows
  • 5 cups Oat cereal

Chocolate Topping

  • 2/3 cups Milk chocolate chips
  • 1/3 cup Dark chocolate chips
  • 1/4 cup Butter
  • 1/2 tsp Salt

Instructions

  • Melt 1/2 cup butter in a medium saucepan over medium heat.  Once the butter has melted, you will add the peanut butter and butterscotch chips and stir until melted.  
  • Add the marshmallows and continue cooking while stirring constantly until they have melted and the mixture is blended together. 
  • Place the oat cereal into a large bowl and then pour the liquid mixture over the top and mix well with a wooden spoon.  
  • Press the mixture into a baking pan prepared and lined with parchment paper.  Press it down with the back of your spoon to smooth, then set aside. 
  • Now, you will make the topping by placing your chocolate chips and butter into a microwave-safe bowl and microwave in 20-second intervals, stirring to combine at each interval.  The chocolate is ready when it has melted and is smooth.  
  • As soon as the chocolate is ready, you will quickly pour it over the cereal mixture in the prepared pan and spread out with a rubber spatula. 
  • Place in the refrigerator for 10-minutes or until the chocolate is beginning to set, then remove and sprinkle the top with the kosher salt.  
  • Return to the refrigerator and allow the chocolate to fully set before cutting into squares to serve or store for later.
