Peel, core, and chop the apples into bite-sized chunks. Pour the apples into a large pot or Dutch oven.
Add the sugar, cinnamon, and water to the apples in the pot. Cover with a lid and cook over medium heat for 18-20 minutes until the apples are very soft. Uncover the pot and remove from the heat.
Mash the hot apple sauce with a potato masher until it reaches your desired consistency. Serve the apple sauce warm.
