Black Bean and Corn Salad Recipe
Black Bean and Corn Salad is the perfect dish to make for summer picnics or a simple side dish. This salad is a light and refreshing and simple to make. This healthy filling salad is a no cook recipe that can even be used as a main dish.
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 2 tablespoons lime juice
- ½ teaspoon cumin
- 19 ounce black beans rinsed and drained well
- 12 ounce whole kernel corn
- 2 cups tomatoes seeded and diced
- ½ cup red onion chopped
- ¼ cup parsley chopped
- 1 jalapeño pepper finely chopped.
In a medium bowl mix the olive oil, lime juice, vinegar and cumin.
Stir in the black beans, corn, tomatoes, onion, jalapeño and parsley.
Serve chilled or at room temperature
