Ingredients to make Easy Southwest Baked Chicken:
- 4-5 chicken breast boneless and skinless
- 1 cup canned black beans rinsed and drained
- 1 cup corn rinsed and drained
- 1 can diced green chilies
- 1 red bell pepper diced
- 1/4 cup chopped cilantro
- 1 cup Colby jack cheese shredded
- 1/2 tsp minced garlic
- 1/4 tsp cumin
- 1/4 tsp crushed red pepper
- 1/4 tsp salt
- 1/4 tsp pepper
Mix the garlic powder, cumin, salt and pepper and set aside.
Place the chicken in a sealable bag, sprinkle the chicken with the seasoning mixture.
In a small bowl combine the corn, black beans, green chiles, red bell pepper, and chopped cilantro and mix well.
Set to the side.
Line a baking pan with parchment paper.
Place the chicken on the pan and bake for 10 minutes.
Remove the chicken and then place it In a large casserole dish, lay the chicken breast flat in the baking dish.
Spread the corn mixture evenly over it.
Add cheese on top of the mixture.
Bake uncovered at 375˚F for 30-40 minutes.
