Raspberry Bellini Recipe

Ingredients

  • ½ cup raspberry puree homemade or store-bought, chilled
  • 1 tbsp lemon juice freshly squeezed
  • 1 bottle rosé/pink champagne or sparkling wine
  • Fresh or frozen raspberries
  • Fresh mint leaves

Instructions

  • Measure out the raspberry sauce into a bowl or measuring cup and add the lemon juice to it.
  • Put 1 tbsp of raspberry mixture into each champagne glass.
  • Top the glass with the champagne.
  • Optional: garnish with frozen/fresh raspberries, mint leaves, etc.

Notes

Homemade Raspberry Sauce

  • 6 oz fresh raspberries
  • 3 Tbsp superfine sugar
  • 2 Tbsp water
  • 1 1/2 tsp fresh lemon juice

Directions:

Puree raspberries, sugar, water, and lemon juice in a mini food processor; strain through a fine-mesh sieve, pressing to release as much juice as possible. Discard solids.
