  • 2 1/4 cups of flour
  • 3/4 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 2 sticks of butter - unsalted
  • 1/2 cup of sugar
  • 1/2 cup of brown sugar - firmly packed
  • 1 egg
  • 1 teaspoon of Vanilla
  • 1/2 cup of chocolate chips
  • 1/2 cup of butterscotch chips

  • In the mixing bowl of a stand mixer, place the butter, sugar, brown sugar, egg, and Vanilla, and mix until light and fluffy.  In a separate bowl, combine the flour, baking soda, and salt, and whisk together until well mixed.  Add the flour mixture to the mixing bowl a little at a time, until well mixed.  Remove the mixing bowl from the mixer, and gently fold in the chocolate chips, and butterscotch chips, until well combined.
  • Line a cookie sheet with parchment paper, and drop the cookie dough by Tablespoonfuls onto the parchment paper.  Bake at 350 for 11 - 15 minutes, or until the cookies are golden brown in color and baked through.
  • Remove to a wire rack to cool completely.  Serve and enjoy!
