This incredibly Easy Chicken Salad with Grapes is a simple and delicious meal idea. This chicken salad has so much flavor and can be used as part of a delicious brunch, lunch or a light dinner. This is one of those recipes you will reach for again and again.
4cupsdiced or shredded cooked chicken I used rotisserie chicken breasts
1cuphalved green grapes
½cupsmall diced celery
2scallions thinly sliced
2tablespoonsfresh chopped parsley
For the dressing:
Zest of ½ a lemon
1teaspoonminced garlic or 1 small clove
2teaspoonslemon juice fresh squeezed
In a large bowl, add the chicken, grapes, celery, scallions, and parsley. Set aside.
In a medium-sized bowl, whisk together the mayonnaise, lemon zest, garlic, dijon mustard, lemon juice, sugar, Worcestershire sauce, salt, paprika, and pepper until fully combined.
Add the dressing to the bowl with the salad ingredients. Stir to combine until everything is coated in the dressing. Serve immediately on bread, lettuce, or eat it as is!
