3medium very ripe bananas, well-mashed (~ 1 cup mashed bananas)
½cupGreek yogurt or buttermilk
½- 2/3cupmaple syrup
¼cupor ½ stick unsalted butter or pureed ripe avocado, melted
Preheat the oven to 375 degrees F.
Put cupcake liners in muffin pans. Spray the liners lightly with cooking spray, optional.
In a medium-sized mixing bowl, mix the wheat flour, all-purpose flour, bran flakes, baking soda, cinnamon, and salt. Set aside.
In a separate large bowl, whisk together the mashed bananas, eggs, yogurt, maple syrup, butter, and vanilla extract until well combined.
Add dry ingredients to wet ingredients and stir. Do not overmix. Make sure that the bran flakes are completely coated with wet ingredients and no lumps of flour remain.
Fold in walnuts until just combined.
Fill each cupcake liner ⅔ of the way full with batter.
Bake for 19 or 20 minutes, until a toothpick comes out clean.
You can leave the bran flakes whole or crushed. They will dissolve during the baking process unless they are in a pocket of flour. Make sure they are well incorporated into the wet ingredients to prevent this from happening.
