Cranberry Walnut Chicken Salad

Ingredients

  • ¾ cup mayo
  • ¼ cup greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon dijon mustard
  • 1 teaspoon garlic paste
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 rotisserie chicken shredded
  • ¾ cup craisins
  • ½ cup chopped walnuts toasted
  • 1 celery stalk chopped
  • 3 Scallions diced
  • Green leaf lettuce for serving

Instructions

  • In a medium-sized bowl, whisk together mayo, Greek yogurt, lemon juice, mustard, garlic paste, salt, and pepper until combined.
  • Mix in the shredded chicken, craisins, walnuts, celery, and ½ of the scallions.
  • Portion chicken salad onto bread with lettuce and serve.

Notes

Lime juice can replace lemon juice if desired.
2-3 cooked and shredded chicken breasts can replace the rotisserie chicken.
The flavors will build the longer this salad chills in the refrigerator but is still delicious when consumed right after making.
Sour cream may be used in place of yogurt. 
For a less mayo-y flavor, you could do ½ and ½ mayo and yogurt or sour cream.
